I spent years keeping my to-do list separate from enjoyable moments. Going through life as if washing dishes, running errands, and grocery shopping could/would never be fun. In my journey through parenting and my own self-discovery I am certain that ALL mundane tasks can be enjoyable moments. It is developed through my own expectations and perspective! Each moment that I CHOOSE to be enjoyable, I gain immeasurable strength and joy. My life is meant to be experienced. My life is meant to be cherished. My life is meant to be challenging. My life is meant to be shared with ones I love. Today -- I chose enjoyable moments with my family. Picking up my newly sharpened knives, and diving into a world of excitement and produce! Shiitake mushrooms! I used to be scared of buying fresh mushrooms, thinking they were too expensive for my budget. Come to find out, they're an affordable addition to my weekly produce purchases! Listed at $12/lb these shiitakes were a $3 purchase. "Breakfast. Maybe it is just me, but growing up, breakfast was either an infamously involved meal coated with leisure and hours to spare... OR it was the product of surging desperation and should-have-left-eight-minutes-ago chaos, which usually meant "breakfast bars", cereal, or instant oatmeal... "
