Christmas cookies ~ the white ones are very similar to the ones called Mexican wedding cookies and/or Russian tea cookie. Ours are called Christmas Kiss Cookies because we put a little chocolate Hershey's Kiss into the center of each one. These are a "must make" Christmas cookie tradition at our house each and every year because our firstborn Daughter Corinne (Cory) just loved this cookie the very most of any Christmas cookies. The Angels collected our precious little girl when she was just 9 years old and since she's in Heaven, making these KISS COOKIES is my way of including our Cory in our Christmas celebrations every year. ❤ The HOT PINK spritz cookies are a BIG MISTAKE! 😬😲😱 HA! We all like traditional spritz cookies but silly me, I wanted to give them a little more pizzazz this year by putting a quarter of a cup of cranberry jello powder into the cookie batter. I wanted them to taste like a cranberry/orange cookie. To achieve these flavors, in addition to the cranberry jello powder, I planned to add a teaspoon of orange culinary oil as well. WELL.....😬 when i went shopping for the cranberry flavored jello, I couldn't find it at any of the supermarkets I shop at. SOOOO.....change of PLAN, instead of the cranberry jello powder, I bought a box of dark cherry flavored jello. I thought I would then add almond extract just like they do when making a cherry pie! I also added a 1/2 teaspoon of lemon culinary oil to brighten the flavors. Alacomzan...I achieved a "cherry pie" spritz cookie! They taste OK but I know the cranberry/orange cookie would have tasted WAY WAYYYY BETTER! Next year......I will shop for cranberry jello MUCH EARLIER! The U-PICK STRAWBERRY FARM we go to opened for the first strawberries of the season today! (We had such a wet, cool spring that it delayed the berries from ripening by the usual time.) Tony said he was second in line, which gives you an idea of how much we love sun ripened, local, strawberries! ❤🍓❤ He picked enough of the "Mt. Hood" varietal for two pies! I make my strawberry pies with a layer of vanilla custard under the glazed berries. Then, when I serve the pie, I put a generous scoop of homemade whipping cream on top! Father's Day is on Sunday, June 16th this year and Tony said he is going to pick more strawberries on Saturday, because he wants one of my strawberry pies on Father's Day!
