January Update:

With my classes this semester , I am finding it more difficult to make posts. While this is the case, I do plan on continuing this blog. For this particular post, I will go over some of the things that have happened these past couple of weeks.

So as of right now, I am finishing up my 10 days in quarantine. While I am vaccinated, Covid finally caught up to me. From when Covid made its appearance up until 10 days ago, I never caught it. I am lucky though that the symptoms were similar to a common cold. I am also very lucky that all of my professors have been super understanding. I unfortunately have missed 4 labs that I will have to make up this upcoming week :/

I haven’t really been cooking as much, just because… covid… I have roommates and I tried to limit the amount of time I was in the shared living space. According to CDC Guidelines, I am at the stage where I should not be contagious anymore, so I double masked up and hit the grocery store this afternoon for actual food… not mozzarella sticks and pizza. I bought red potatoes today, and I am going to make broiled/smashed potatoes this upcoming week. I swear I eat more than potatoes lol.

I never made a post about the salmon I had cooked. It probably didn’t deserve a post because I did not care for it much. I am always down for trying new foods, but this one.. it just wasn’t for me.

Valentine’s Day is coming up and I am excited. This is my boyfriend and I’s third Valentine’s Day together. So far I have bought him a plant that I have been hiding from him. It is a type of succulent & I honestly do not know the name. It is pretty though. He has been asking for a cactus, but the store did not have any in stock.

!!!!!!!!!!Also- (I had to edit this post because I forgot) holy shit guys… I HAVE AN INTERNSHIP. It’s only for a month because I have field camp for most of the summer but this is huge!!! Honestly everything happened so fast (I don’t know how I even got it). Anyways I am beyond excited for the opportunity. I will be interning with exploration geologists within a well established mining company. I absolutely cannot wait. I am a bit nervous but overall very excited :)))

Mom’s Potato Soup

Ingredients:

5-7 potatoes (I used Russet, but you can use whatever kind you like)

3 carrots

3 stalks of celery

1lb sausage (optional)

8 oz block of sharp cheddar cheese

32 oz carton of vegetable broth

1-2 cups of water (however much you prefer)

1–2 cups of heavy whipping cream

Large spoonful of cream cheese

Seasoned w/ salt, pepper, and garlic powder to liking

Prep:

Chop vegetables

Brown sausage in pan on med-high heat. Break sausage into small pieces.

Dice up block of cheese into cubes

Directions:

In a pot, add your vegetable broth and water. Season your broth with salt, pepper, and garlic powder.

Add your vegetables to pot once a low simmer is reached.

You will want to boil your vegetables in the broth until they are soft.

When you are able to cut the potatoes in half easily with your fork, turn the heat down to a simmer and add in the prepped sausage.

Alongside the sausage, add in the heavy cream, cheese, and cream cheese.

Cook until cheese and cream cheese have melted.

You’re done!

Note: I do not have a precise recipe, so I normally just go off whatever I have. Feel free to add or subtract ingredients to your liking :)

About Me:

A little about me. I am a 21 year old female (she/her) in college studying geology… hence miss geo. While I do love everything geology related, I also enjoy other areas of science and the “non-geo” world.

For example, while I know it is completely scripted, I love watching the Kardashians. (Hot topic, I know) Maybe because it is a break from the technicalities and stress of being within a STEM major¿ I don’t know.

Of course I love hiking and traveling. Basically a no brainer. On the other side of being an aspiring geologist, I find my interests also lie in beauty and fashion. A couple of years ago, I wanted to be a fashion stylist/makeup artist. Oh, how I have changed, haha.

Like my previous post/blog has stated, I will be trying to cook more. I currently feel like I am talking into the deep, void, Mariana Trench, where no one will read this, but if you happen to, send me your favorite recipes! I know later today I will be making my mom’s potato soup (might make a recipe post), and later this week I will attempt to make lemon garlic salmon!

Hello 2022,

I guess I am starting this blog as my 2022 New Year’s Resolution. Goal for blog? I don’t think I have one per se. I think blogging about my life would be more beneficial than scrolling endlessly through social media. Here I would want to write of my thoughts, travels, new experiences, etc. Other than the blog, I do have other goals for the New Year.  1.) Read at least 5 books this year. Something I have not done in a long time. I am currently reading Perks of Being A Wallflower.  2.) Eat and be healthier. I feel sluggish and tired all the time. 3.) Go hiking more.  & 4.) Cook and try new foods. (Most likely will be discussed here) I think the blog may help keep myself accountable for my resolutions. Maybe others would want to join along the way? I don't know. Let's see how it goes.
