Blackened fish tacos
so like I gotta eat more vegetables because I need the fibre and I also need more healthy-AND-easy meal options so I stop defaulting to delivery when I'm burnt out or flared up and in my attempts to combine these two needs I have discovered:
one of those bags of frozen single-serve microwave-steamed vegetables in a pan (post microwaving) on medium heat for like 10-15min with your choice of seasoning is actually really yummy and also super flexible so it doesn't get boring (my usual choice of seasoning is onion and garlic infused olive oil, salt, pepper, paprika, honey, and garlic powder, but sometimes I'll just do honey/soy)
makes a great side for whatever you have lying around, I've had them with air fried chicken nuggets/tenders, leftover kfc, pan fried pork or kangaroo steaks, and sometimes if I have leftovers from a BBQ chicken I'll shred that up and mix it in, tonight I had no meat in the house so I air fried a handful of sweet potato fries and then broke them up and threw them into the pan to soak up the oil and seasoning, and that worked out super great!
you can also combo it with a pack of 2min noodles for bulk, cook the noodles by the pack instructions and then chuck them in the pan with the veg for a few minutes to soak up the oil and flavour (you could probably season the veg with the flavour packet from the noodles but I haven't tried that yet, I usually set those aside and use them as a quick and easy mug of broth when I've been sick and need the salt)
you could probably also serve it with those little microwaveable cups of rice (I haven't tried that personally tho)
so yeah highly recommend this as an easy, yummy, veg filled, flexible meal option 👍✨ please feel free to add your own easy veg meal tips!

hi am going to show you a very cheap and very filling meal that you can make in bulk in less than 5 mins. americas government has said "fuck you" to us once again and i dont want anyone going hungry so here is a recipe that i am obsessed with
you can use any kind of oats you like. instant oats, rolled oats, it doesnt matter. you also do not have to use chia seeds but i recommend them because not only does it add to the texture but it makes this meal even more filling.
i did not have chia seeds because i ate them all so just imagine there are chia seeds in here
if all you have is oats, that is perfectly fine it will still taste amazing. but if you can afford it, add anything you like. i really like bananas so i added some banana. you can add a sweetener as well. i added maple syrup. peanut butter is a good option too for added fats that will keep you full longer
now add a liquid. you need enough liquid for the chia and oats to soak up. if dairy is out of your budget, do plain water. but if you have spare tea bags lying around, steep your tea, chill it, then add it to the mixture. i did kefir for mine because it adds a richness and its full of vitamins
now blend it! blend it until its all smooth. no lumps or bumps! you may eat this as soon as youve blended it, but if you do, you wont get the absolutely amazing texture if you wait 30+ minutes
it is just.... utterly divine. its blended overnight oats. thats the recipe. but oh my god. it's better than any overnight oats youve ever had in your entire life. its like a decadent dessert. i cant get enough of it!! and its SO. FILLING.

Two quick "can't be fully bothered but willing to be slightly bothered" meals.
-Avocado rice with some sort of protein
Cook some rice (can sub for instant ramen) - an entire pot of rice can be cooked and then frozen in portions for future easy eating. Just reheat in microwave.
Dice an avocado
Add some sort of protein like canned tuna, canned salmon, boiled/friend egg, fried tofu, etc
Poor some sushi seasoning (diff than rice vinegar bc sushi seasoning is sweetened rice vinegar) and soy sauce to taste
Mix
Optional: crush up some seaweed and sprinkle on, or use seaweed to scoop up the rice mixture, add hot sauce
-Egg drop ramen with selection of veggies
Cut up couple choice of veg or get some frozen veg (I like the chunky Cali blend with broccoli, cauliflower, and carrot) and throw into boiling water with ramen seasoning packet
Add and cook instant ramen after like 5 min
Cook ramen according to directions
Turn off heat, crack an egg into the hot soup. You can choose to stir the egg all the way in at this point or just put a lid on it for 5 min to do a semi poached egg thing
Optional: drizzle with little bit of sesame oil if ramen didn't come with it, add some kewpie mayo on top for extra richness
Stovetop smoked sausage jambalaya rice
Cheap and super easy to make, this lunch or dinner is one of my favorites to have as leftovers for the next few days. You will need a cover for your pan.
Ingredients:
Smoked (Andouille) sausage
Diced onion
Diced green bell pepper
Diced celery
1 box of jambalaya rice
Directions:
Cut up the smoked sausage into small bites. Place in a pan with cooking oil and fry until they turn slightly brown.
Dice your onion, bell pepper, and celery, then add all the vegetables and the jambalaya rice to the sausage in the pan. Mix together so it all cooks evenly.
Add water. Bring it to a boil, then cover and let everything simmer for about ~25 minutes.
Once the rice has absorbed the water, plate your dish and save some for leftovers tomorrow.
