Looking for a fast  yummy way to use all of that extra juice pulp? Look no further! Your Veggie Flax Crackers with Kale Guacamole have arrived!

    Veggie Flax Crackers

I am so thankful to have found this recipe for all of my juice pulp! You can also crumble the crackers up as a crouton substitute on a salad. Yummy. Note: If you juice entire lemons or limes, don’t add that pulp as it will be very bitter.

Ingredients:

1 cup flax seeds

1 cup water

1 cup veggie pulp (I like it from a juice of bell pepper, kale, celery, cilantro, apple)

1/4 cup olive oil

2 tablespoons apple cider vinegar

2 cloves garlic

1/2 teaspoon salt

Coconut oil spray

Parchment paper

Instructions:

Preheat oven to 250 degrees. In a medium mixing bowl, combine all ingredients and mix well. Line a large rimmed baking sheet (9 x 13 preferable) with parchment paper and spray generously with coconut oil spray. Pour batter onto pan, pushing to the edges and making even. Score into squares with a knife (or cookie cutters if you want to get fancy). Bake for about 1 1/2 hours, flip over and bake for another 45 minutes, or until cracker is totally dry. Cool completely and store in a sealed container.

Kale Guacamole

Ingredients:

2 medium ripe avocados

1 tablespoon coconut oil

1/2 cup kale pulp

1 tablespoon lemon juice

1 clove garlic

1 teaspoon cumin

1/2-1 teaspoon salt (to taste)

Optional add-ins:

1/4 cup chopped cilantro

1/2 teaspoon cayenne pepper

1/2 cup chopped tomatoes

2 tablespoons red onion, finely chopped

Instructions:

Heat a small skillet over medium heat. Add coconut oil and kale (you can leave kale pulp raw, and omit coconut oil, but the pulp does have a grassy flavor that cooking lightly reduces). Saute about 5 minutes. In a medium bowl, mash avocado flesh with a fork and add remaining ingredients, including sauteed kale. Mix well and add more seasoning and lemon, if desired.
