Dev: yep the theme was random, and I did the theme proud! I started making these patties all different kinds to get some more goodies into Shanzys sandwitch, did the trick! and super easy because no frying!

What’s left in the fridge? That’s what inspired these patties! My boys had fun making them with me, I just love the little feet on a chair in the corner of the mixing photo. …sorry off on a mummy love moment :D

I used this bread, I love it! And its nice and thin so little hands can eat it easily with a big patty inside!

2 carrots 1 zucchini 1 small onion 1 large garlic Parsley and rosemary to taste (my plants are still fairly small or I would have used a lot more parsley, I love the stuff!) 1 can kidney beans

Put everything in a mixing bowl add seasonings, I used organic salt free seasoning, sea salt & pepper

Add lots of yummy yeast, and couple of tablespoons of chickpea (garbanzo) flour to bind

Roll mix into balls and flatten between your palms, place on an oiled tray, spray with mist of oil and bake at 365 until golden!

Result is a super yummy sandwich!

Vegetarian sambo! So many yummy things on a wholemeal bun! I love this brand tofu from Costco if you freeze it (not my fave fresh but frozen its an awesome texture! Seems softer than most) freeze and semi defrost just enough to cut with a bread knife, add to a hot skillet with some oil and you will notice all the water melt out from the tofu, add your seasonings and cook all the moisture away. Makes for some super juicy goodness! The arugula from my potted garden is in full force now and I love the spicy peppery taste! I also used this grapeseed vegenaise (love this stuff) onion, tomato, cucumber,cheese. Yummy lunch for my family done super quick and easy! - Dev
