Sicilian Zucchini
Sicilian Zucchini
2-3 pounds organic Zucchini 1/2 pound hot Italian sausage 1/4 cup virgin olive oil 2-3 tablespoons of butter 2 tablespoons of crushed garlic 1 tablespoon garlic salt 1 tablespoon garlic pepper 2 tablespoons Lipton's dry onion soup mix 3/4 cup yellow onion 1/2 cup fresh basil 6 Roma tomatoes 1cup white wine
Wash and prepare Zucchini, onion, basil and tomatoes ( I like to cut my zucchini in length one inch pieces) but if my grandkids are helping to cut the zucchini I am not particular... It is more about the time together and not perfection of the Zucchini pieces!
In pan pour oil and add butter, melt on low heat.. Then add chopped onions, garlic sauté for 7 minutes, break up sausage in small pieces add to this mixture, cook for 4 minutes.. Sprinkle Lipton onion soup mix over ingredients.. Cook for 2 minutes, stirring very gently.. Then add in zucchini, stir in making sure all zucchini is coated with sauté mixture... After 5 minutes of cooking on medium heat add chopped tomatoes and chopped basil, pour wine over the top of all ingredients, add in garlic salt and pepper... Turn heat on low and Simmer for 15 to 20 minutes being careful to stir the zucchini very gently... Do not over cook zucchini, better if it has some form to it! Sometimes I add mushrooms to this.. Put the mushrooms in when adding the sausage.. Serve Sicilian Zucchini as a side dish or you can serve as a stand alone main dish with some garlic bread... This is one of my grandson Josiah's favorite meals...
