Full of fresh flavors, this Cilantro Lime Skillet Chicken is perfect for a Paleo diet. Lime, cilantro, and spices are combined in a zesty marinade to make a colorful and delectable dish that's ideal for a nutritious supper.
Ingredients: 4 boneless, skinless chicken breasts. 1/4 cup fresh cilantro, chopped. 2 limes, juiced and zested. 2 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon cumin. 1/2 teaspoon paprika. Salt and pepper to taste.
Instructions: To make a marinade, combine the minced garlic, olive oil, cumin, paprika, chopped cilantro, lime juice, lime zest, and salt and pepper in a small bowl. Pour the marinade over the chicken breasts and place them in a plastic bag that can be sealed. For at least 30 minutes, marinate the bag in the refrigerator after sealing it. To keep it from sticking, heat a skillet over medium-high heat and drizzle with olive oil. After taking the chicken breasts out of the marinade, put them inside the heated skillet. Cook the chicken for 6 to 8 minutes on each side, or until it is cooked through and reaches an internal temperature of 165 degrees Fahrenheit 74 degrees Celsius. Pour any remaining marinade over the chicken to add more flavor during the last minute of cooking. When the chicken is cooked through, take it out of the skillet and give it some time to rest before slicing. Garnish the sliced Cilantro Lime Skillet Chicken with extra cilantro and lime wedges, if preferred, and serve it with your preferred paleo-friendly side dishes.
