"I'll have a Johnny Lennon, please" - while it may be famous for its beaches and entertainment, the Gold Coast keeps impressing me with just how good their food can be. Take Tribeca NYC on Chevron Island. While just metres away from the bustling tourist hub of Surfers Paradise, you'll find a lot more locals heading out to eat, drink and relax. Tribeca NYC is modelled on those classic American dishes, but often with a healthy twist. Sure, there's Mac & cheese, sliders, burgers, fries and hot dogs but there's also gluten free, vegetarian and 'health conscious' choices. That's where the Johnny Lennon comes in. Forget the heavy buns, on this plate is a locally sourced (delicious!) American-style sausage topped with sauerkraut, ketchup, mustard and a trademark pickle, but it's on a bed of fresh salad. I'm starting to detect a trend in Queensland. I've found some of the coolest cocktails up here! From the Fairyfloss Windmill in Townsville and now this Poprocktini at Elston, an all-day dining and drinking space on the Esplanade of Surfers Paradise. The rim of the cup is coated in those fizzy delicious pop rocks and will pop as you sip the passion fruit, peach and apple vodka concoction. 200 feet into the air the gondolas ride, their white exteriors striking against the blackness of night. The Wheel of Brisbane is one of the highlights along Brisbane's bustling South Bank precinct. Get on as a spectator or stay for dinner (yes, you can dine inside the gondolas!), it's a spectacular way to see the city views. Or do as I did, and take a night Segway tour of the waterfront. From poppies to plantations - I came in search of Thai tea but found so much more when I visited Doi Ang Khang, a town in the mountainous region of the Thai/Myanmar (Burma) border. The fertile lands were once used to grow opium poppies - an ingredient in heroin - and then what remained was set alight in a farming practice called 'slash-and-burn' which, while providing nutrient rich soil for the poppy crop, contributed to the deforestation of hundreds of acres of land. Today, the land is site of the first Royal Project Agricultural Station, founded by the King in 1969. The aim is to assist local hill tribes with a sustainable business model and access to the facilities to grow the right crops for the region. This produce is then sold in the cities under the Royal Project brand and served up at Royal Project cafes, restaurants and hotels. One night is not enough at Elephant Hills Jungle Camp. Located in Khao Sok National Park, you'll take a 30minute long boat out to the floating camp. There's no wifi, there's extremely limited 3G, you're forced to take a digital detox and reconnect with the nature all around you, especially the cheeky monkeys and apes in the forests surrounding. Unfortunately, the smoke from the Indonesian burnings (a yearly event which hangs thick in Southern Thailand and Singapore's air until the wind changes in November) blanketed everything in a haze of white, but in someways this made the land beautiful in an unexpected way. Instead of the dramatic limestone cliffs and dark green forests I expected, the smoke caused the cliffs to appear in fifty shades of green or grey. As afternoon came a downpour came - the wet season (or 'green season' as the Thai's prefer to call it) happening now, with mist rising up from the land as it cooled, curling over the peaks and crevices of the mountains; a brief respite from the hot temperature and humid air that leaves you feeling damp all the time. | #KhaoSok #Thailand #Asia (at Khao Sok National Park)

No matter what hour you visit Pak Khlong Talat - Bangkok's 24/7 flower market - will be a hive of activity. Fresh flowers bought in, packaged and sent to stores, hotels or bought by locals and visitors alike. While you'll find many species of flowers, the smell of jasmine will hang in the air. Probably the smallest flower, but also the most popular, huge bags will be weighed and filled for sale. There's a few ways you can travel around Bangkok, but by tuktuk has to be the most fun. After enjoying dinner along Bangkok's waterfront, overlooking the golden pagodas of a Wat, and a walk around The cities 24-7 flower market, we hired a convoy of tuktuks to take us to Chinatown. Racing through the dark streets, the wind whipping at my hair and doubling as air conditioning (when we did finally escape the traffic). Each driver seemed to be more competitive than the next, vying for pole position as horns blared and lights flashed by. The brave leaned precociously out of the moving tuktuks side 'window' to capture the convey. The smell of jasmine hangs in the air as you walk through Pak Khlong Talat, Bangkok's 24-hour flower market. Hundreds of species of flowers, most notably the colourful speckled orchids, on show are for sale wholesale to businesses and public. Be careful though! Don't touch if you aren't going to buy! Muay Thai (Thai Boxing) is huge in Thailand, and the best fighters come to the capital, Bangkok. Wednesday, Friday and Saturday is fight night at Rajadamnern Stadium. Everyone can visit with ringside tickets costing 2,000 baht (around AUD$70 or USD$55), but tickets get cheaper if you want a more authentic experience amongst the locals. There's live music that grows louder and faster if the action is going well, but if the fight is going really well you I'll hardly be able to hear it over the noise of the crowd spurring their fighters on. I was ringside, but this photographer sitting in front of me got unrestricted action shots... but also covered in sweat whenever the boxers hit the ropes near him.
