1. Adapted "Perfect Guac" (Food Network)
Pile 1/2 cup chopped onion, 3/4 cup torn cilantro and a big pinch of kosher salt on a cutting board. Chop, then mash into a paste with the flat side of a large knife. Transfer to a bowl, add 3-4 diced avocados and mash with a wooden spoon (or masher) until combined but still chunky. Stir in 1 more diced red onion and season with salt, pepper, and a pinch of chili powder.
2. Adapted Bobby Flay's Super-Superbowl Beef Chili
4 lbs ground beef (93% - 7%)
Salt and freshly ground black pepper
1 large red onion, finely diced
1 medium white onion, finely diced
4 cloves garlic, finely chopped
3-4 tablespoons chili powder
1 diced habanero chili pepper
2 diced cherry chili peppers
1 tablespoon ground cumin
8 oz. homemade chicken stock, or canned low-sodium or water
2 (32-ounce) can chopped tomatoes, drained and pureed
2 16 oz cans of red kidney beans
Heat oil in a large pot over high heat. Season the beef with salt and pepper, and saute until browned on all sides. Transfer the meat to a plate and remove all but 3 tablespoons of the fat from the pan.
Add the onions to the pan and cook until soft. Add the garlic and cook for 2 minutes. Add the chili powder, and cumin and cook an additional 2 minutes. Add the habanero and cherry chili peppers and cook until completely reduced. Return the beef to the pot, add the chicken stock (or water) tomatoes, and red beans. Reduce the heat to medium, cover the pan, and simmer for 45 minutes to one hour.
3. Pigs in a (GF) Blanket!
1 package Trader Joe's Pups (Pigs)
Rough Puff-Pastry Dough (Blanket)
1 1/4 cups gluten free flour
1 stick (1/2 cup) plus 5 tablespoons unsalted butter, frozen
5 to 6 tablespoons ice water
Sift together flour and salt into a chilled large metal bowl. Set a grater in flour mixture and coarsely grate frozen butter into flour, gently lifting flour and tossing to coat butter.
Drizzle 5 tablespoons ice water evenly over flour mixture and gently stir with a fork until incorporated.
Test mixture by gently squeezing a small handful: When it has the proper texture, it will hold together without crumbling apart. If necessary, add another tablespoon water, stirring until just incorporated and testing again. (If you overwork mixture or add too much water, pastry will be tough.)
Gather mixture together and form into a 5-inch square, then chill, wrapped in plastic wrap, until firm, about 30 minutes. (Dough will be lumpy and streaky.)
Roll out dough on a floured surface with a floured rolling pin into a 15- by- 8-inch rectangle. Arrange dough with a short side nearest you, then fold dough into thirds like a letter: bottom third up and top third down over dough. Rewrap dough and chill until firm, about 30 minutes.
Arrange dough with a short side nearest you on a floured surface and repeat rolling out, folding, and chilling 2 more times. Brush off any excess flour, then wrap dough in plastic wrap and chill at least 1 hour.
Once dough is finished chilling, flatten out and cut dough into strips about 3 inches long and 1 inch thick.
Wrap dough around Pups out of package, and arrange on a greased baking sheet.
Bake for about 1 hour or just until dough begins to get golden.

6 small to medium sized russet baking potatoes (total 3 pounds)
4 ounces grated cheddar cheese
1 Scrub the potatoes clean then bake the potatoes using your favorite method, either oven or microwave. If using an oven, rub with olive oil and bake in a 400°F oven for about an hour until the potatoes are cooked through and give a little when pressed. If using a microwave, rub all over with olive oil and cook on the high setting for about 5 minutes per potato.
2 Once they've finished baking, cut each potato in half lengthwise and scoop out a portion of the inside (I usually keep this and then make mashed potatoes with it, but you could discard - whatever floats your boat).
3 Once the potatoes are scooped out, put a generous 2 tbsp of grated cheese on each half a bit of salt and pepper and then bake at 350 to 400 until cheese is melted.
4 While the potatoes are cooking, cook the bacon strips in a frying pan on medium low heat for 10 to 15 minutes, or until crisp. Drain on paper towels. Let cool. Crumble.
5 Crumble bacon on top of potato skins and then place back in the oven for another 5 mins.
*FOR DESSERT I MADE A BOX OF SOUTHERN FUDGE BECAUSE IT WAS GF AND DOESNT REQUIRE BAKING. But unfortunately no one had room for anything else after all of the other food... :/
