Tomato and Habanero Chilli Jam
Ingredients
8 red peppers, deseeded and roughly chopped
10 red chillies, roughly chopped
1 finger-sized piece of fresh root ginger, peeled and roughly chopped
8 garlic cloves, peeled
400g can of cherry tomatoes
750g golden caster sugar
250ml red wine vinegar
Method
Place the peppers, chillies (with seeds), ginger, and garlic into a food processor. Blitz until very finely chopped.
Transfer the mixture to a heavy-bottomed pan. Add the cherry tomatoes, sugar, and red wine vinegar. Bring to a boil, stirring to dissolve the sugar. Skim off any scum that rises to the surface.
Reduce the heat and simmer for about 50 minutes, stirring occasionally.
Once the jam starts to become sticky, continue cooking for an additional 10–15 minutes, stirring frequently to prevent burning. The mixture should resemble thick, bubbling lava.
Allow the jam to cool slightly, then transfer to sterilised jars. Let it cool completely.
