A 6 am loaf. Last night I realized I didn't have any bread in the house, and I have a very busy weekend ahead of me. So I started Autolyse at 7 pm, and put it in the refrigerator for retarded final fermentation at 11. I set an alarm for 5 am so I could preheat the oven and Dutch oven. The results are pretty spectacular. I typically start my dough in the early morning and then bake in the late afternoon. But the overnight regarding really does make a fine loaf. Hey there. Wanna follow me down a rabbit hole. So once again I'm reading an article about how adulterated most olive oil is. http://www.motherjones.com/environment/2016/08/olive-oil-fake-larry-olmsted-food-fraud-usda How most of it is shitty other oils, or old oil, or rancid oil, or some other shit. Now right about now I'm feeling PRETTY FUCKIN SMUG, because I buy a local olive oil from a small local chain. If you aren't from Sonoma County you don't know about Oliver's Markers. Oliver's is where you go when Whole Foods doesn't fill your smug quota. It's my favorite store. And over course I buy NAPA VALLEY NATURALS. Of course it is California sourced olives. LOOK AT THAT LABEL. But the article has a handy link to an organization that certifies California sourced olive oil. https://www.cooc.com/seal-certified-oils/ and of course I never pay an opportunity to verify my smug. So of course there it is. . . Wait why is my favorite Napa Valley Natural not on the list? I know, this certification board is some kind of money sucking scam. But that is clearly an oversight. I mean, the oil comes in wine bottle shaped bottles. Ah ha, there is a phone number at the top of the page. They will straighten this out. Oh, so it turns out that phone number is for the phone sales store. They just take orders for the product. Maybe try the corporate office. Here is the number. Hmmm. The voicemail message tells me that Napa Valley Naturals is a small family company, and as such it will likely take three days or more to return my call. So, in an desperate attempt to keep my smug intact, I call the California Olive Oil Council, and a cheerful lady answers the phone. I mention my dilema, and suggest that I realize that Napa Valley Naturals is not on their certification list because they don't want to pay into the fund to run this program, right. And the very nice lady informs me that Napa Valley Naturals could not pay to be a part of their certification program because most of their oils come from various regions of the Mediterranean and Europe. O_o Dear Oliver's Market. We need to talk.

Regarding TMI: Please reconsider telling people that they “overshare” or that they’ve given you “TMI.” This is a way to shame people because of YOUR discomfort. Furthermore, information is power. Me sharing about being HSV+ (I AND II!! Overachiever!!)  means that someone, somewhere, feels a little less stigmatised, even just for a moment. My sharing about my uterus shedding its lining means one less person might feel ashamed when they bleed through onto their clothes. Me sharing about my insides helps people not compare their insides to my outsides. Telling people they are “too much” may lead a vulnerable person, struggling to fully self-actualize, to instead retreat. No, you aren’t responsible for their feelings….however you ARE responsible for your words. And I suggest that those words are spirit-killers.
