Schneenockerln
Starting off sweet with austrian dessert Schneenockerln that is commonly made in Croatia.
Schneenocerln (šnenokle in Croatian, or in English egg-whites dumplings) are simple dessert made with few ingredients:
Milk
Eggs
Sugar
Vanilla sugar (or vanilla stick)
First you need to separate egg whites and egg yolks in two separate bowls. After you've done that, take a pot in which you're going to cook your Schneenockerln and pour in one litre of milk and let it heat up.
Now you need to beat egg whites with hand mixer until you can hold the bowl upside down without egg-whites falling out of it. In original recipe, that's it, but in my experience it's better to add vanilla sugar to your egg whites, and not in milk. That way your egg whites dumplings will have aroma of vanilla and they will taste better. If you don't add vanilla sugar, they'll be just soggy dumplings that taste like egg whites in delicious egg yolk creme.
For those who don't know what vanilla sugar is, it looks just like normal white sugar, but it has vanilla taste to it. It's commonly used in dessert making in Europe
Now you need to mix egg yolks into creme. When you have your creme, add sugar. You need to add number of table spoons of sugar proportional to number of eggs you used. (e.g. 4 eggs = 4 table spoons of sugar.) After you've added sugar, now you need to mix it once again.
By now, your milk should've heated up and you should see a thin protective layer on your milk. Take that layer off, and turn down the heat.
Take a table spoon and use it to make dumplings from the egg whites and put them inside the milk. Dumplings cook quick, you need to let them simmer in milk for minute, minute and a half, two minutes maximum while turning them over in milk so that they cook at all sides. Now you need to take them out of milk and put them in bowl in which you're going to serve them.
When you're finished with dumpling, pour egg yolks into milk and stir with a whisk until thickened.
Pour the creme over dumplings and leave them on the counter until they cool a little, and then put them in the fridge.
And now you have Schneenockerln. They are best served cold in little bowls. You can sprinkle them with cocoa powder if you want, but it's not a must. Enjoy your dessert.
