Supper. Finally tried the plantain pizza crust. A little easier to make than the cauliflower crust.
Fresh, hot, outta the oven...chocolate avocado muffins. This gluten-free, clean eating thing is getting easier now that I am baking ny own goodies! 1/4 cup coconut flour 1/3 cup cocoa powder 1 tspn baking soda 1 tspn baking powder 1/4 tspn sea salt 1 tspn cinnamon 1 ripe avocado 3 eggs-room temp 1/4 cup honey 1 banana 1/4 cup coconut milk 1/4 cup melted organic, unrefined coconut oil Preheat oven to 375f Sift coconut flour and cocoa powder. Add remaining dry ingredients & mix. Add all wet ingredients, except coconut oil. Mix Once mixed, thoroughly, add the melted coconut oil last. Pour into muffin tins and bake 18-20 mins. After trying these, I would recomment using coconut sugar instead of honey. These were not sweet enough for my liking. Seeing that I have a whole batch, I will be using fresh almond butter to make more palatable.
Clean eating and gluten free for twelve days. 13# lost for good. I just whipped up these cauliflower crust, personal pizzas with avocado on the side. DELICIOUS!
