I've a stack of recipes, all nutritionally suitable for PS up my sleeve, that I hope to feature on the rotating menu. But ensuring the flavours are appealing to kids, and won't be leftover in their lunchboxes at the end of the day, much to their parent's dismay, is something that needs to be carefully looked at.
Luckily, I've the biggest kid of all as a taste tester. Enter, my dad, a man appreciative of baked treats (my grandmother was a fantastic cook) and coincidentally a paediatrician. I took him a batch of banana honey muffins baked on spelt flour yesterday afternoon. They're dairy free and packed full of energy. He thought they were good, especially the lightness, but for kids to devour, needed to be a tiny bit sweeter. I'll need to up the honey, or look at introducing a tiny bit of raw brown sugar into the batter.
