When Amanda had taken a bite, she realised that she should’ve told Paco that she was not a big fan of shrimp at all. Every dish that had that thing in it, immediately tasted off to her. So she scrunched her nose at the taste of it. “Don’t value my opinion on this too much because I don’t like shrimp at all. I would say it’s good but I would advise you to let someone else taste it.”

𝐋𝐈𝐏𝐒 𝐂𝐀𝐒𝐓 𝐈𝐍𝐓𝐎 𝐀 𝐅𝐑𝐎𝐖𝐍, now he feels he's wasted both their time. and it's with slight annoyance that he says, "well, why didn't you tell me sooner?" before plucking a leather-bound menu from underneath him, sliding it across the counter, and turning to the first page for her. as something of a consolation, "here, order anything you like," he tells her, nudging the menu a few inches closer towards her.

Jenn took a bite of the dish that Paco wanted her to try out, letting the flavors sit in her mouth for a few moments as she chewed. As someone who often made new versions of her cookies, she always valued honest feedback when it came to her work. And she wanted to do that for the other, too. "I personally think it's great. Maybe it could have a little bit more spice to it but I'm just someone who loves things hot. Other than that, it's really great. The perfect summer meal."

𝐅𝐑𝐎𝐌 𝐎𝐍𝐄 𝐅𝐎𝐎𝐃𝐈𝐄 𝐓𝐎 𝐀𝐍𝐎𝐓𝐇𝐄𝐑, paco is grateful for jennifer for showing up to try his new recipe. and for being honest about the spice. "yeah, i usually get comments that my dishes tends to be a little too spicy. i just can't seem to find the right balance, you know?" he shrugs. "can't please everybody, i guess. but i think a touch more pepper won't hurt." he shifts the towel to his other shoulder, eyes moving from jenn's plate to the cascade of curls framing her often bright and open face. "how's business down at the cookie cabin?"

"It's good. Personally, I'd like more spice, little more lime.. but I know that's not everyone's thing." Alec took another bite of the ceviche, for surety sake. Ceviche was something that Alec had grown up on and knew well. "I think for mass appeal, it's spot on."

"𝐌𝐀𝐒𝐒 𝐀𝐏𝐏𝐄𝐀𝐋, 𝐒𝐔𝐑𝐄," paco mumbles under his breath, duly noted to heart. and just for his honesty (and because he's feeling particularly generous today), he offers, "hey, do you want some flan? it's on the house." because he can do that, he can give away stuff for free, if he wants. his cousin might not be so inclined to agree, but his cousin isn't here. well, not yet.

"You're fine, I promise," he laughed, waving off the other man's worry that he actually was being too pushy. "Honestly, you just looked so concerned, I had to razz you a little bit. But I can absolutely, full-heartedly promise you that you have nothing to worry about with this dish. I don't say this lightly, because I don't want to start a restaurant war in town, but… I prefer it to a lot of the shrimp dishes over at Sandcastles, even," which said a lot, considering the fact that seafood was their specialty, something they did better than many others. Glancing up at the interaction between Paco and the wait staff, he did his best to keep his smile at bay, his nervous energy somewhat amusing, and definitely endearing, just to see how far he went to please his customers. That was a tell-tale sign of someone who cared about their business, and Josh admired it. "Thank you," he smiled, lifting the glass to his lips and taking a sip, letting the liquid linger before swallowing, "it's very good. I'm not a wine expert by any means, but you picked perfect for the meal," he gestured to the food, taking another bite and chewing thoughtfully before shaking his head, "I haven't, I've traveled a bit here in the States, down to Mexico once or twice, up to Canada a bunch. Never Chile. Should I?"

𝐒𝐀𝐍𝐃𝐂𝐀𝐒𝐓𝐋𝐄𝐒 𝐖𝐈𝐋𝐋 𝐍𝐎𝐓 be pleased to hear this review from their mutual customer. he, on the other hand, graciously accepts the compliment with a small nod and nothing more. frankly, he couldn't care less about competition. he's just here to cook his food and hope that it might remind someone of a warm memory or at the very least, fill the stomach. "well, i'm not going to tell you that you shouldn't," he tells josh, almost sarcastically, if he cared enough to be bothered that josh even had to ask. "it's a beautiful country. of course, i have to be biased." a hand flies to his chest as he speaks earnestly. "there's plenty to do in chile, especially if you like the outdoors. we're best known for our wine, so the vineyards are always a great place to start if you're planning on going. but there's other things, too, like climbing volcanoes. did you know we have over 2,000 of them?" he smiles, a sense of pride washing over him as he speaks.

Vick was sitting there she had decided to go to Evolution for food after work and had got asked to try something new so she did. She sat there trying the food, “Okay hold on, give me a moment to absorb it.” She said finishing the food for a moment, “It’s good, not the greatest I’ve had but I am not a food crtic so I can’t say much. But I would say maybe a little too sour for my liking.”

HEAD TILTS IN THE SAME WAY a confused animal would at a a blaring horn. "not the greatest you've had?" he repeats, like he hadn't been expecting something so casually honest though he'd been the one to ask. forearms are pressed against the cold metal of the counter, "tell me about the greatest you've had, then," he asks, almost as if to challenge her — name me something better — but he's really just curious to know what 'the greatest' would taste like to her, maybe take a few pointers while he's at it.

Vitus chews, swallows, then chews some more. Then pops another bite in his mouth, a look of pure speculation on his face as he contemplates each discrete flavor. "Mm, it's missing something. Wait, wait, let me..." Another bite. And then Vitus's face lights up as he says, "Cilantro. You need more cilantro. But overall, a solid nine out of ten."

"CILANTRO..." he repeats contemplatively, lets the word soak in his thoughts like it would in the salad. folds his arms over his chest, weight shifting to one leg as he tries to imagine what more cilantro would do for his dish like the answer is in the high ceiling of the converted warehouse. and finally, "i'll be right back," disappears behind the counter, into the steel door, and through the wide, rectangular window, vitus might see him chopping up cilantro leaves with the meticulous concentration of a bomb diffuser. when he returns, it's with a small white bowl of the aforementioned herbs that he uses to motion towards vitus' plate. "may i?"

"... I can't taste while you're staring at me, Paco," Josh tried his hardest to keep a serious face as he said it, but ended up laughing, both at the sincerity of the questions that he was asking, and also just at the look on his face. "Honestly, I think it's pretty perfect. I'm not sure that I would change a single thing. But I might need to try it again to be sure?"

"AH, I'M SORRY..." paco winces, internally kicking himself for being too eager, and turns his head away, pretending to spot something interesting in the corner of the room. (that monstera looks particularly green today...) he only pulls his focus back on josh when his friend declares his conclusion on the dish, heart fluttering the way it always does when he hears anyone talk about his food, whether positively or otherwise. "do you want some wine to go with it?" and before josh could even repsond, paco snaps his fingers at one of the passing servers. "get me the amayna. quickly." the bottle of sauvignon blanc is handed to him in record time. he folds the towel in his hands underneath the bottle when he pours some into josh's glass. "this is imported from chile, from a place called leyda valley. a coastal region, kind of like maine. it's right beside the pacific ocean." he steps back slightly, allowing josh some space to enjoy his meal without him breathing down his neck. "have you ever been to chile?"

PATIENTLY, PACO WATCHES the other person take a forkful of his new ceviche salad recipe, a white towel anxiously squeezed in his fist as he awaits their verdict. "how do you find it? too sour? too spicy? you think the shrimp to greens ratio is enough?"
