PB&J Pancakes
Prep time: 10 mins
Cook time: 20 mins
Servings: 16 4-inch pancakes
Ingredients:
1-1/2 cups all-purpose flour
¼ cup sugar
1-1/2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1-3/4 to 2 cups buttermilk or whole milk
2 large eggs
3 Tablespoons unsalted butter, melted
½ cup creamy peanut butter
1 cup peanut butter chips
Grape jelly (or jam or jelly of your choice
Vegetable oil
Instructions:
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
In a separate bowl, whisk together the milk, eggs and butter and add to flour mixture. Whisk until evenly blended. Stir in peanut butter and chips.
Heat a griddle or heavy skillet over medium heat. Lightly oil griddle.
Spoon batter for each pancake onto griddle and cook for about 3 minutes, or until bubbles start to form. Flip pancakes and cook for 2 more minutes.
Transfer to a platter. Keep warm in a low 250 degree oven if desired.
Serve with warmed jam or jelly of your choice.

Peanut Butter Pancakes with a Chocolate Coconut Ganache
Servings: 1
For the pancakes
1/8 cup Peanut flour
1/8 cup Chickpea flour
1/8 cup Coconut flour
1/2 tsp baking powder
1/4 cup milk of choice
1/4 cup egg whites
1/2 tsp vanilla extract
Directions:
Put all ingredients in a bowl and mix until combined. Heat a skillet over medium heat and melt a little coconut oil. Pour about 1/8 cup batter onto skillet and cook until bubbles start to form on the top, then flip and cook until browned. Repeat until the batter is gone and stack on a plate!
For the Chocolate Coconut Ganache
1 tbsp cacao powder
sweetener of choice
warm water
1 tbsp melted coconut butter
Directions:
Melt your coconut butter however you like, I usually warm the whole jar in a sauce pan filled with water over medium heat until it's runny. Combine the cacao powder and sweetener with enough warm tap water until it's smooth. Add the coconut butter and mix. You may need to add more warm water to get a nice smooth, chocolate-sauce consistency.

Red Velvet Cheesecake Pancakes
Serves: 3-4
Ingredients:
1 cup flour
3 teaspoons baking powder
½ teaspoon salt
3 tablespoons sugar
1 tablespoons cocoa powder
2 tablespoons butter, melted
1 egg, beaten
¾ cup buttermilk
1½ teaspoons vanilla
1 teaspoon red food coloring
4 ounces cream cheese
Icing:
1.5 cups powdered sugar
2 ounces cream cheese
heavy cream, or half and half, or milk
¼ teaspoon vanilla
Directions:
Slice cream cheese lengthwise into long thin pieces, wrap in plastic wrap, and freeze one hour or overnight.
Preheat a large pan or nonstick skillet to medium heat and spray with cooking spray. In a large bowl combine flour, baking powder, salt, sugar, cocoa powder and whisk together until well combined. In another bowl combine beaten egg, buttermilk, vanilla, red food coloring and mix until well blended. Make a well in the middle of the dry ingredients. Pour wet ingredients into the dry ingredients. Mix until all ingredients are incorporated. Remove cream cheese from freezer, unwrap and cut into ½ inch pieces. Stir cream cheese pieces into pancake batter. Pour ¼ cup batter onto prepared pan or skillet. Cook 3-4 minutes until top begins to bubble and sides start to look "dry". Carefully flip and cook about 2 minutes longer. Repeat with remaining batter.
Whisk all icing ingredients together in a medium sauce pan and heat over low heat. Drizzle over pancakes. Enjoy!

Spinach Pancakes
Servings: 18-20 pancakes
Ingredients:
2 cups Stonyfield non-fat plain greek yogurt
1/2 cup milk
2 cups fresh baby spinach
2 tablespoons honey
2 eggs
1 cup whole wheat flour
1 cup white whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
Directions:
In a blender (such as a Blendtec) or food processor, blend the greek yogurt, milk and spinach together until a green liquid. Blend in the honey and eggs.
Blend in the flours until combined.
Stir (do not blend) in the baking powder and baking soda.
Cook by the 1/4 cup on a hot greased griddle pan.
Serve warm with your favorite toppings!
