Healthy meal ideas that are super easy, fast, and delicious!
So you’re trying to be more healthy but you have NO TIME and it’s just easier to grab fast food or something on your way out! I feel ya man, as a ft college student with a pt job and a social life, things can get pretty hectic for me too.
Here I’ve compiled a list of quick meals that aren’t skimping on the nutrients!
Please note that while all meal ideas are vegan, you can easily add a non-vegan component to any of them! They are yours to interpret!
BREAKFAST
Smoothie! Here are some of my favorite combinations:
bananas, soy milk, peanut butter, spinach
watermelon, oranges, coconut water
frozen peaches, strawberries, banana, soy milk
also try making nana “ice cream” by freezing the bananas!
Bagel topped with mashed avocado OR jam OR nut butter
Cereal with soy milk and berries
All fruit breakfast - smash it in!!
LUNCH/DINNER
Vegetable soup
Pasta OR rice with marinara sauce and any steamed veggie (my favorites are broccoli and zucchini)
Baked potatoes (I microwave mine for 5 mins) with lemon juice, Earth Balance buttery spread, salt and pepper
Lettuce wraps
cut up veggies of choice
roll in lettuce
dip in salad dressing or guacamole
Veggie pizza!!
pile a pizza crust with sauce, veggies of choice, and whatever else you want (I always use fresh herbs and buffalo sauce)
cook that sucker for about 10 mins
eat it ALLLLLLLLLL
Veggie curry or stir fry
cut up all your favorite vegetables
put stir fry sauce on and stir until cooked OR
cover with curry sauce and let simmer until cooked, stirring occasionally
Microwave packs of Indian food: a lot of ready-made Indian food is healthy and ready in seconds!!
SNACKS
Fruit!!!
Dried fruit also, but without added sugar! (my favorites are raisins and medjool dates)
Nuts / nut butters on rice cakes
Veggies, pretzels, or unsalted corn chips WITH hummus, guac, or salsa
Popcorn (light salt and oil)
Dark chocolate
