Pro tip: If you want to order a cake, have half a clue what you want.
Makes everyone’s lives easier. I don’t understand, like have you never seen a cake before? If you don’t care what you get go to Costco or Sam’s or Walmart or whatever, don’t waste my time because I can’t read your mind. I want to make the best cake possible, not something you wouldn’t be happy with.
Holding off at home bakery but
I just got a job as a baker at one of the big wholesale retailers! I was so happy that I got hired. I was tired of being a cashier. I was having a hard time finding any bakery job but so glad that this fell right onto my lap.
I want to save up for an LLC before I begin a home bakery just to cover the bases. I changed the name of what I was planning on. It’s a pun. I’ll probably reveal the name when I get my LLC.
Either way, I’m so happy I get to do something more than being a cashier. It was getting to me and the standing around was utterly annoying. Like I want time to move fast, not as slow as molasses.
Baking cookies: yeah just put anything in the bowl with an egg and it’ll work out no stress
Baking cake: you’re gonna have to follow the recipe down to the gram if you want it work but you’ll be ok
Baking bread: oh it’s slightly less humid out than normal? Sorry you’re doomed to fail don’t bother trying
I'm back! Also starting my own baking business.
I know I've been inactive for a very long time. A lot of stuff happened and my love of the blog, baking, food, etc was just going downhill. A sparked happen and I have decided to come back. I miss blogging. I miss pretty much everything about blogging.
Until just a few months ago. I realized that my dream of opening up my very own bakery is still in my heart.
NY just allowed people to become home processors and bake at home. As opposed to renting a commercial kitchen. Just a tiny few restrictions of what to make but it doesn't require any crazy type fees. So I sent in my application and waiting for it to approve but I came up with the name for it; 'Nonna Maria's Dolce Boutique' in honor of my late maternal grandmother.
My mother will be giving me recipes that she learned from my grandmother so I'll be adding some Italian goodies as well. I'm very excited to start this journey.
My end goal would probably be opening up a brick and mortar bakery but this is a marathon, not a sprint. I'm looking forward to becoming my own boss and see how my dream will progress.

Some of you may have noticed that I really haven’t been posting at all on the blog. I am taking care of my 3 year old niece since my sister is working full time and they both live with me so I’m usually busy with the cutie and I don’t have time to post so that’s why most of what I have been posting are just submissions. Also, now that I am on medication for anxiety and depression, I have more energy to go out into the world and explore. I don’t want to delete the blog so I am looking for 1 to 2 co-admins to help me run it.
The thing is since I make sure I always get permission to post content on my blog, which I have accumulated a HUGE list of links that I have gotten permission from the blog owners to post onto the blog so posts can be taken from those links. I also will create an Gmail account for the admins to send messages to a blog owner that isn’t on the list of links to make sure permission is asked before anything is posted onto the blog. The links will be posted on a OneDrive document so that way it will be easier to chose what blog to post from.
Post will have to be in the format that I have them in now:
{Title of recipe or diy here in bold} {I then hold down shift and press enter} {Source in bold and italic}{:} {blog website name right here}
I don’t mind if it’s like {title of recipe or diy here} {the word source, space, and the blog website name}. Just as long as the title of the recipe or diy is linked to the actual post and the blog’s website name is linked to the main page of the blog.

For my recipe/diy blog
One of our other bakers just cost our GM $9000 (I don’t know how) and has fucked off the last four days she was supposed to come in, came in drunk one day she came in to help pastry crew and he still won’t fire her!! Oh well, I’m leaving in three weeks to move back to my home state so I have no more fucks left to give!
My fiance` and I were able to score VIP seats under the culinary area at the Taste of Buffalo this year! We seriously ended up only going to see Lidia Bastianich as I have loved her ever since my mother and I would watch her TV series when I was younger. I tried to record the whole demo but alas wasn’t quite successful so I’m uploaded all the videos I have and edited them all together to create this video.
I also brought one of her cookbooks and had her sign it for my mother and I! She was kind enough to record a little video for my mother speaking to her as my mom is in Long Island and couldn’t come to see her. She is such an amazing, down to Earth woman. Just like my late nonna.

I found a commercial kitchen for me to use when I finally have the funds needed for all the permits, insurances, and licenses to become a caterer because that way I can bake and sell my items out of state as well. I finally managed to find the information I needed so I’m super stoked! I've estimated that it will just cost me $1,000 a year give or take for all the requirements needed for my business to run.
I am looking for a job so I can use it as income to supplement my lifelong dream. We want a storefront eventually once the business has a good customer base so that way we can take out a loan from a bank. It's only $25 per hour which isn't bad compared to other prices. An update - I finally have a job!
So it’s not in the baking industry per say. I am working as a store associate for one of the grocery stores here BUT I am going to actually be cross trained in the bakery department and the deli/carry out area. Which means I still am working with food. Super happy! It’s going to be easier for me to save up money to finally open up that online bakery then a brick and mortar bakery! My managers think it’s wonderful that I have some experience in the culinary arts so it probably helped me to get the job. ;)
I think some of you know that I have struggled with depression and anxiety, I never was properly diagnosed but I am 30 and it was time for me to change my life around. I had enough of life holding me down so I ended up seeing a doctor. She is super wonderful and very thorough. She ended up diagnosing me with generalized anxiety and moderate depression. I am now on the generic brand of Celexa and luckily for me, it was the first medication that I had took which is working wonders for me. Unfortunately, I know others who had to change medication a few times before finding the right one.
I have to tell you. The difference is night and day! I finally am able to go out to eat in public without the fear of thinking that people are talking about me. I am actually learning how to drive so I can get my license in the Summer so it will be much easier for me to go to work without relying on my fiance` or the bus. I still struggle a bit but it’s not as crippling as it was without the medication. I can live life to the fullest and it feels wonderful.
I would pay good money to watch Gordon Ramsay come in and yell at my head baker and tell him to get his head out of his ass.
Pastry chef: I can bake anything. Just last week I had someone request a birthday cake topped with tomato sauce, mozzarella, and pepperoni, and I made it without a problem.
Customer: Impressive, was it hard to pull off?
Pastry chef: No. In fact, it was a pizza cake!
