Did a taco crawl for lunch yesterday and hit three places that have been on all the local lists as well as Bon Appetit Magazine, who named Trompo the Taco of the Year in 2016. Had barbacoa at each stop to use as my measuring stick (even though Fuel City's offering is not true barbacoa, they use a roast beef), had a lengua and a carnitas. I was amazed at the different flavor profiles of each restaurant, clearly each had mastered their own recipes and versions. Best taco of the day was El Si Hay's barbacoa. Just the right amount of cheek meat and they didn't shy away from the fat!
