Did a taco crawl for lunch yesterday and hit three places that have been on all the local lists as well as Bon Appetit Magazine, who named Trompo the Taco of the Year in 2016. Had barbacoa at each stop to use as my measuring stick (even though Fuel City's offering is not true barbacoa, they use a roast beef), had a lengua and a carnitas. I was amazed at the different flavor profiles of each restaurant, clearly each had mastered their own recipes and versions. Best taco of the day was El Si Hay's barbacoa. Just the right amount of cheek meat and they didn't shy away from the fat! Made it to Heim's today. All in I'd say good, the brisket however did not shine. Needed more seasoning, the rub didn't make it to the middle. There was also no smoke flavor (or rings but I don't have to have a smoke ring as long as the flavor is there) which is a big miss. Tasted more basted than smoked, wonder if they wrap the whole time? (We were first in line so I know they hadn't been stewing long.) Ribs were the star which has the lowest bar for que and is easiest to cook. Still no smoke though. Would go again but looking forward to Panther Island and when BBQ on the Brazos opens for my next visit to Cowtown. Crazy good dinner last night at Beverly's Bistro. Pictured is the charred octopus which is among the best I've ever had. More consistent sweet and clean flavor and texture of shrimp. Fun side trip when in Austin on business. Got to try what Thrillist listed as the top brisket in America recently. The brisket had an outstanding crust on it, heavy salt and ample pepper. I prefer a heavier smoke taste but I know that’s not en vogue these days. Nonetheless, a fair amount of smoke on the meat. I had the privilege of chatting with Evan Leroy, the pit master, who couldn’t have been more patient with me as I nerded out. Oh and there’s a selection of over 100 whiskeys if you’re into that kind of thing? I will definitely be back!

Got to try Cattleack BBQ (@CattleackBBQ) for the first time. A worthy choice in Dallas! Brisket had just the right amount of smoke flavor. Traditional seasoning could have used just a touch more salt and pepper. Great if you like a heavier beef flavor. The rib was seasoned and cooked to absolute perfection. Sausage seasoned nicely with a thick meat grind, very little filler.

Super Woman got me the best Father’s Day gift ever, a spot in Lockhart Smokehouse’s Smoke Camp. The top photo the incomparable Will Fleischman (http://bit.ly/1R9qhZC) gives us some “inside baseball” on cook temp and cook techniques.

Enjoyed our roasted pig at Frontier much more than Chicago q.

Had a chance to check out Chicago q while in town for work and based on Ray Lampe’s recomendation (http://bit.ly/1Rzu6Cw) for First We Feast I was excited. Boy was Lampe wrong. The food was hammered, had zero smoke flavor or flavor of any other kind for that matter. The wagyu ribs had no meat on them at all. The wagyu brisket was grainy, no moisture (how can you screw up a wagyu brisket?!) and I shutter to think what competition the “competition” St Louis ribs won. Maybe best ribs served in a college dorm mess hall?

Kruez jalapeño sausage, burnt ends, beef belly. The closest thing I can compare the beef belly to is a beef rib. Very intense beef flavor, they use heavy black pepper and kosher salt which leads to just a perfect caramelized sugar cookie. Can't believe I have never had any before!
