Fun side trip when in Austin on business. Got to try what Thrillist listed as the top brisket in America recently. The brisket had an outstanding crust on it, heavy salt and ample pepper. I prefer a heavier smoke taste but I know that’s not en vogue these days. Nonetheless, a fair amount of smoke on the meat. I had the privilege of chatting with Evan Leroy, the pit master, who couldn’t have been more patient with me as I nerded out. Oh and there’s a selection of over 100 whiskeys if you’re into that kind of thing?  I will definitely be back!
