Salted Caramel Chocolate Crinkle Cookies

Today was my week for Cookie Friday. Every Friday two or three people in our department make cookies, a delicious tradition. My Friday just happened to coincide with finals week, not ideal, but I wanted to take my cookies to the next level.
These cookies aren't too different from a regular cookie. A lesson I learned the hard way as a child, cocoa powder for hot chocolate is NOT cocoa powder for baking. I finally put that lesson to use purchasing baking cocoa powder for this recipe.
Unwrapping all of my caramels was sort of a hassle, but not a deal breaker. My biggest struggle was one I didn't even know about until they were out of the oven. My caramels had all sunk to the bottom of the cookie. This doesn't change how they taste, but it was frustrating. Next time a thicker base of dough may be required.
Also the recipe suggested dipping them in powdered sugar before and after baking. Personally the covered in powdered sugar look doesn't add anything, but go with your gut on that one.
It remains to be seen whether these will be as delicious tomorrow as they were today just out of the oven with the gooey caramel.
