Was really craving a roast! But we've given up meat so got a little creative. Roasted off parsnips, carrots, leeks, red onion, mushrooms, crushed garlic cloves and baby plum tomatoes with fry light, mixed herbs, garlic powder, onion powder and seasoning. Then added in four Linda McCartney red onion sausages cut into quarters. Once all cooked, I added two knorr vegetable stock pots, a pint of water and tsp of smash to thicken. Then back in the oven to finish off. Skin on mashed potato, broccoli, seasoning and tbsp quark. Plain boiled peas.
