Jambalaya
This recipe is from Jim, a.k.a. @SCRAMBLERinCHI
It looks less complicated than my other Jambalaya recipe. I will try it very soon.
Ingredients
3 T. Bacon grease 3 cloves garlic - minced or chopped 3 cloves so if you love garlic go for it 1 Small white onion - chopped 1 Med green pepper - chopped 1/2 a bunch if celery chopped 1 cup of condensed uncle Ben's white rice 3/4 c. vegetable or chicken stock. match stock to protein being used 1 large can of diced tomatoes 1 1/2 t. Hot sauce - I like Louisiana gold habenero but use whatever you like and as much of it as you can handle :-) 1 1/2 t. Worcestershire sauce Black pepper to taste 1/2 lb. of chicken, any kind of sausage- chopped in to 1" pieces, crawfish tails or shrimp 2 bay leaves
I gave you half of my normal recipe. For every 1x you'll need a 4 qt pot - cast iron Dutch ovens works the best - that can be used on the stove and then baked at 350*
Preheat oven to 350* Over med* high heat add bacon grease to pot. Add onion and garlic and saute til just brown then add GP and celery. Lower to medium heat and stir until celery becomes soft. Add rice and stir to thoroughly absorb grease. Add hot and Worcestershire sauce. Empty entire contents of diced tomato can to pot with stock, protein and stir well. Stir everything and make sure to scrape down any rice that is stuck to sidee of pot. Place bay leaves on top, cover and bake for 45 minutes at 350*
Leave covered until ready to serve. Stir well and spoon healthy portions to serve.
