I impressed myself with this one guys 👆🏻It looks complicated but is really SO EASY — and — I don’t remember the last time I had a breakfast this good. It’s @wifemamafoodie ‘s pancake recipe; I used whole wheat flour this time (10x better than when I subbed GF flour). For the blueberry topping I warmed frozen blueberries in a pan, added maple syrup to taste, a little lemon juice to make the color pop 🙌🏻 and simmered for a few minutes before adding chia seeds to thicken it up. For the whipped topping I used an electric mixer to beat full fat coconut milk (that was in the fridge overnight) with a splash of vanilla extract. And sugar if you like it a bit sweeter (I omitted that). Layer pancakes with banana slices and top everything off with extra maple syrup 🥞🧡
