For the first time in my life, I completely threw my back out. I thought I had done it previously – you know, “Ouchie! My back sure smarts! I guess I’ll pop some Advil and lay low for a few hours.”
This was nothing like that.
I have been barely able to walk, let alone sit up, for the past two weeks. Ice, heat, muscle relaxants, lots of Alleve, careful stretching, massage – not a dent in it for the first week. I’m just now finally able to get around without stiffly step-falling between the furniture that I was using to support myself, but it’s more of a careful swaying than actually putting one foot in front of the other.
Being barely able to move has made eating, not to mention cooking, a major challenge.
Thankfully, I am great at improvising.
Here are some recommendations for quick and easy meals if you ever find yourself almost completely unable to leave your bed!
The last piece of fruit on the counter.
This overripe banana was just a delight, minus the really mushy bits. Prep time: 1 minute or less, depending on how long it takes you to peel it.
Leftover Halloween candy.
And candy canes, of course. Bonus: excellent calorie density, though the sugar rush may leave you feeling a bit woozy when this is the only thing you’ve eaten for the day.
The stale end of the bread one of your roommates left out.
It’s either that, or the moldy danish you found by the toaster.
So much delivery food.
Please god, I hope I don’t drop my wallet on the floor. The floor is dead to me.

When it comes to what you can make and eat, the world really is your delicious oyster (the parts of it that are between waist-height and however high you can reach without passing out from the pain)!
And, when everything you can reach has been consumed and money for delivery food has run out, you can rely on the people you love to bring you things.
Unless they’re not home at the moment. Or they’re sleeping.

In all seriousness, it has been really rough these past two weeks. But I am so lucky to have the support of my wonderful Mark and some really excellent friends & family. I can’t imagine what it would have been like if I didn’t have people like them to help me out or if I still had to commute to an office for work. (Which is why we need to support this and other measures like it: Mandatory Paid Sick Leave.)
Hoping to get back to bringing you actual recipe posts soon. XOXO!
