If you want a character to be really cool and overpowered but still realistically lose fights, just make their strongest powers require a lot of energy and have them collapse after a big fight. That way, viewers can't ask "Why didn't they just oneshot everyone?" because they know it would take too much energy.

Imagine feeling upset and then a butterfly turns you evil. That'd be so embarrasing. When you're turned back to normal, everyone you know will remember you doing evil stuff and you just gotta live with that.
