All Raw, Banana Cream Pie!
How many of you like banana cream pie? It's one that I loved growing up! It was the perfect combo of healthy banana with whipped cream and banana cream filling! I, by the way, loved whipped cream!
Since starting to eat vegan and raw I am trying to find different ways to make the food I love in a heathy way. I am really amazed by how good something healthy can taste!
The even crazier thing is how my taste buds have changed. What I used to love, I genuinely dislike now. I can't explain how that happened, but it did! Instead of craving Doritos, I crave a big salad with homemade pesto dressing. I also crave vegan nacho's. HAVE MERCY, it's good stuff! 🙈😀
The thing I absolutely love the most is how clean I feel. Before I became vegan I would have said that I felt clean but after becoming vegan and also cleansing my body through detoxing and flushes as well as eating a lot of raw food I can say that I now feel a lot cleaner than before. I just love that feeling!
Being healthy doesn't mean that we have to eat boring food and not enjoy anything. I think that's where a lot of people fail when trying to go vegan or going all raw. I remember when I was younger and going to school or work I would take my then vegetarian food and everyone was so fascinated with what I was eating. They thought that vegetarians just ate lettuce. lol Find recipes that you like. There are so many out there now on Pinterest and Google. You don't have to force yourself to eat something you really don't like. But I will warn you! Your tastebuds will change, and those foods you now don't like, you may come to love simply because your body will start craving food in it's more natural state. Foods that aren't loaded with sugar, and butter, and cream.
I wanted to make a pie that reminded me of banana cream pie. I also wanted to combine that with fruit to give it a dreamy, creamy and tropical flare. Once when I was in Hawaii, I went to the Dole Plantation. It was such a cool place! Everything there was pineapple! There were pineapples growing in the field. They had pineapple sorbet, pineapple ice cream, pineapple cakes. They had shirts with pictures of pineapples on it. Hats that were in the shape of pineapples. It was like, pineapple land. lol. It felt so tropical in hawaii and I loved that!
In this recipe I use a frozen bag of tropical fruit. It is a blend of mango, pineapple and banana. The more dominant flavour is banana and the fruits give it this amazing pina colada taste! Love it!!
So, Here is my recipe!
Banana Cream Pie Recipe
Crust:
1/2 Cup Almonds 1/2 Cup Pitted Dates (maybe a couple more. You want it to stick together) 1 Tablespoon Coconut Oil
Filling:
1 1/2 + 1/4 Cups Raw Cashews (Not soaked. It totally changes the consistency of the cake if they are soaked) 1 Cup Water 1/3 Cup Agave Syrup 1/3 Cup Coconut Oil 1/4 teaspoon Stevia powder a small piece of vanilla 3 Tablespoons Lemon Juice 2 Ripe Bananas
Tropical Fruit Layer:
1 1/2 Cups Tropical Blend Frozen Fruit Or you can use a fresh mango and pineapple.

Put your almonds in the food processor and blend until they are in smaller chunks. Then add your dates and coconut oil. Blend until the crust sticks together.
Press it down into your cake form. Use a form that you can remove the bottom from otherwise it's impossible to get the cake out later. Also, make sure you cut parchment paper and put it in the bottom of your form!
Next, put all of your filling ingredients in the blender (except the tropical fruit blend). Blend until very smooth. Pour half of that into your pie form. If you put that in the freezer for a few minutes then it makes it a little more stiff for when you pour on the next layer! 😀
Next, use the remaining filling and add your tropical fruit. Blend that until smooth and then pour it on top of your filling in the form!
I like to decorate the top with some coconut shreds. It gives it a little more tropical flare! Stick this in the freezer and let it sit for at least 7 hours before serving.
When you are ready to serve, take it out and let it sit for at least 15 - 20 minutes. Or just until you are able to remove it from the pan and then slice it. 😊
