bacon- wrapped scallops with spicy- cilantro mayonnaise by Recipe Girl
Zucchini Cobbler
12 cups zucchini, peeled and chopped into quarters
1 cup fresh squeezed lemon juice
¾ cup brown rice syrup (or raw sugar)
1 ½ tsp cinnamon
1 tsp nutmeg
3 cups of gluten free oats, ground to a course flour in a food processor (or organic bakers flour)
¾ cup raw sugar
1 cup raw coconut oil (or cold butter)
1 tsp cinnamon
Preheat the oven to 375’. In large saucepan over medium heat, cook chopped zucchini in the lemon juice for 10-15 minutes. Add brown rice syrup, cinnamon, and nutmeg, and simmer for 1 minute longer.
For the crust: combine oats and sugar in the bowl of a food processor and pulse until the oats become coarse flour. Pour into a large bowl, and stir in cinnamon. If you’re using coconut, crumble the oil and oat mixture with your hands. If you’re using butter, cut in until mixture resembles course crumbs.
Stir in 1/2 cup of crust into the zucchini mixture. Press 1/2 of remaining crust mixture into greased baking pan, spread zucchini over top, and crumble crust to just cover the zucchini. Sprinkle with cinnamon.
Bake for 35 minutes. Enjoy à la mode fresh from the oven, or allow to cool and fridge it for at least an hour.
Pizza Dip
4 ounces cream cheese, room temperature
1/4 cup sour cream
1/4 cup mayonnaise
1/2 cup mozzarella, grated
1/4 cup parmigiano reggiano (parmesan), grated
1 cup pizza sauce
2 ounces pepperoni, sliced
2 tablespoons green pepper, sliced
2 tablespoons black olives, sliced
Mix the cream cheese, sour cream mayonnaise, mozzarella and parmigiano reggiano and spread it across the bottom of a pie plate.
Spread the pizza sauce on top and sprinkle on the cheese, pepperoni, green pepper and olives.
Bake in a preheated 350F oven until the cheese has melted, bubbling and golden brown, about 20 minutes.
Turkey Meatballs with Tomato and Basil
1 1/2 pounds ground turkey (ground turkey thigh meat if available)
1/2 cup bread crumbs
1/2 cup sour cream
1 egg
2 tablespoons minced fresh basil
2 teaspoons Kosher salt
2 teaspoons minced fresh rosemary
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon fennel seeds
1/2 teaspoon red pepper flakes
1/3 cup flour, for dredging
Sauce
1/4 cup olive oil
2 large garlic cloves, minced
1/2 jalapeno chile, seeded, minced
3 tablespoons chicken stock or white wine
1 1/2 pounds fresh tomatoes, roughly chopped (can sub one 28-ounce can of crushed tomatoes)
1/4 cup fresh basil, sliced thin
Place the ground turkey, bread crumbs, sour cream, egg, minced basil, salt, minced rosemary, oregano, thyme, fennel seeds, and red pepper flakes in a large bowl. Using your (clean) hands, gently mix together. Place dredging flour in a shallow bowl. Form 1 1/2 to 2-inch diameter meatballs, and roll them in the dredging flour, and set them aside. You should have approximately 18 to 22 meatballs.
In a large, shallow sauté pan, heat the olive oil over medium high heat. Gently add the meatballs to the pan. Do not crowd the pan, you may need to work in batches. Once the meatballs are sizzling in the hot oil, reduce the heat to medium low and gently cook them on at least 3 sides, until the meatballs are browned all over and cooked through, about 10 minutes per batch. (Gentle heat will make it take longer for the meatballs to brown, but will ensure that they get cooked through.) Use tongs or a slotted spoon to remove the meatballs from the pan to a bowl.
Add the garlic and jalapeno to the pan and cook for 1 minute. Add the chicken stock or white wine, increase the heat to high and boil it down to the point where a wooden spoon leaves a marked trail through the pan.
Return the meatballs to the pan and coat with the pan sauce. Add the fresh tomatoes and toss to coat. Cook for 4 minutes or until the tomatoes just begin to break down. Do not overcook the tomatoes. Turn off the heat and toss in the fresh basil.
HASH IT OVER
I spent the weekend at the top of a mountain (not exaggerating) in Asheville hanging out with my family. My family indulged me by letting me cook as much as possible. A hearty Saturday morning brunch of sage-scented sweet potato hash with fried eggs and sauteed kale got us in the mountain mood.
Roast Chicken with Hot-Sauce Butter
Ingredients:-
3 ounces orange Scotch bonnet or habanero chiles (about 10) 1 orange bell pepper, halved, seeded, coarsely chopped 4 1x3 inch strips orange zest 4 tablespoons St-Germain liqueur, divided 2 tablespoons kosher salt, divided, plus more for seasoning 1 garlic clove, smashed 1 cup Champagne vinegar 2 teaspoons cornstarch 4 tablespoons unsalted butter, softened, divided 1 3-pound chicken, cut into 4 pieces, backbone removed Freshly ground black pepper
Preparation:-
Wearing gloves, halve and seed chiles. Purée chiles, pepper, zest, 2 tablespoons liqueur, 1 tablespoon salt, and garlic in a blender. Transfer to a bowl, cover with plastic wrap, and let ferment at room temperature for 12 hours. Purée chile mixture in a blender with vinegar, remaining 2 tablespoons liqueur, and remaining 1 tablespoon salt until smooth. Set a fine-mesh strainer over a small saucepan. Strain mixture, pressing on solids. Heat hot sauce over medium heat. Stir cornstarch and 2 teaspoons water in a small bowl until smooth. Whisk cornstarch mixture into hot sauce. Simmer, whisking constantly, until thickened, about 2 minutes. Whisk in 3 tablespoons butter. Season to taste with salt. Keep warm. Preheat oven to 450°. Season chicken with salt and pepper. Heat remaining 1 tablespoon butter in a large ovenproof skillet over medium-high heat. Cook chicken, skin side down, until golden, about 5 minutes. Turn chicken and cook 6 minutes. Remove breasts from pan and transfer to a plate. Place skillet in oven and roast legs for 12 minutes. Return breasts to skillet; roast until legs and breasts are cooked through, about 10 minutes longer. Serve with hot-sauce butter.
