My first attempt at making curry.
Pizza
I've become a bit obsessed with The Pizza Show on Youtube, I've watched it so much that I feel like Frank Pinello is my friend. The basic premise of the show is Frank exploring different cities and what their pizzerias have to offer.
I've watched all the episodes now, so I figured it's about time I tried to make some pizza of my own. I've made pizza at home before, but only using those dry bases from the supermarket and then throwing ingredients on top. Inspired by Frank, it was time to give the real thing a go. It's quite a learning curve, and whilst making it I already made mental notes of what I'd change for next time. Here's what went down. The dough was a simple recipe; flour, water, olive oil, yeast and salt. I mixed it all together and then let it 'proof' in the fridge for 24 hours. I'm not sure what that means but it's what Frank does so obviously I'm copying the main man. The dough was quite solid after being in the fridge and hard to manipulate into the thinness I wanted (again, another change for next time) so after letting it come to room temperature, I decided to make what Frank calls a 'Grandma pizza'. It's basically a pizza that is stretched out on to a pan and then put in the oven.
Toppings wise I wanted to make a simple margherita, so I got mozzarella and a can of pozzano tomatoes. I did a bit of research and pozzano tomatoes are the standard tomato used in pizza and mozzarella is just 🔥. I blended the tomatoes and threw in some salt and pepper and then it was good to go. Remember when I said earlier about things I'd change for next time? Having more cheese was first thing, one ball of mozzarella is not enough...
After around 10 mins the pizza was done, it tasted pretty good for a first try. You can see what I mean about needing a bit more cheese and the thickness of the dough. For next time I'm going to tweak the dough recipe slightly so it's a bit more stretchy and then try out some different toppings, the possibilities are endless.
Why?
As a way of dealing with recently being made redundant, I've decided to start making a record of a journey I'm going to undertake in the kitchen. I've always enjoyed cooking, it's a big stress reliever and I love the gratification I can get pretty much instantly from making food for friends, family or even just myself. With unemployment comes a lot of free time...so I've decided to spend a bit of this time to making dishes that take a bit of patience and that I've never tried before, this might be slow cooked meats, breads or fresh pasta, I'm not sure yet but I'm excited to try different methods of cooking and see what I can do.
