So these are both “Aw Fuck I’m outta real food” meals BUT ALSO: if you’re learning how to cook, these are great “baby steps” meals to learn how to cook basics into something enjoyable without “wasting” anything expensive. Though I maintain that even cooking screw-ups are valuable in terms of lessons learned.

We’re kinda low on groceries atm so I just threw together some stuff for dinner tonight mostly from the freezer & cupboard, and made an extremely dank ass meal I want to remember for later.
Simmer: 1 cup TJ’s green lentils - cooked via the recipe on the back of the bag (+ chicken broth & red wine)
Sautee in garlic and olive oil: 1 carrot, half a green bell pepper, quarter of a sweet potato, leftover white rice. I threw in some leftover red curry sauce from the fridge, like a 1/8 cup? and 1/8 cup green curry from the pantry.
Bake: Several TJs fish nuggets
Combine lentils & veggie mixture on stove, mix together. Put that in a bowl with a couple fish nuggets on top. Squeeze lime over top. Throw some chutney on. Throw some sour cream on.
Fucking delicious.

I’M GETTIN INTO BOWLS!
Basically super easy to throw together:
- A grain (quinoa, rice, bulgur, farro) - A protein (tofu, chicken, beans, hardboiled egg) - Vegetables (sauteed greens/peppers, raw spinach) - A sauce (optional)
For lunches this week I made a base of garlicky bulgur (super easy - bulgur is good!), honey glazed broiled tofu (also super easy - just marinated tofu in soy sauce and honey overnight, then broil for about 10 mins), and sauteed chard, tomatoes, and mushrooms. Literally so freaking delicious. I bought it all from the store for about $10 and that’s big lunches for me the whole week.
I’ve eaten this chickpea lentil salad 3 times in the past two days. I’ve found myself wandering to the fridge and forking leftover bites into my mouth, just like I would if cookies were sitting, taunting me on the counter. But this is salad, not cookies, so I'm all about keeping this stocke
