Allow to sit 20 minutes to an hour to start pulling out the juices and kick starting the process. ➢ Add the blueberries, apples and sugar to your pot and cook over medium heat for 40 minutes stirring often to ensure nothing is sticking to the base of the pan or the sides. (Use whatever heat setting on your stove achieves a light simmer.) Stir often to prevent burning! ➢ After 40 minutes your jam should be thicker and slowly bubbling over the heat. Now add your lemon juice, stir, and cook an additional 5-10 minutes. ➢ To be sure it will set, I take a spoonful and allow it to cool to see if the consistency is what I want. Once I know the jam will set perfectly, I remove from the heat and spoon the jam into the sanitized mason jars or up-cycled jars of my choosing. ➢ I did add dissolved cornstarch to my jam and quickly mixed it throughout (about 5 minutes before I was ready to take my pot off the heat.) Cornstarch is a thickener. You don’t “need” cornstarch but I used it to be 100% sure the jam would be set for Thanksgiving meal- which was only a couple hours away when I was making this!
