Easy salad the other night after a long and productive work call 🙌🏽🧡💜

Chili lime shrimp atop arugula and veggies and goat cheese

Guess what!!! I made these muffins FROM SCRATCH WITH NO RECIPE.

Just threw a bunch of stuff together:

Flour

Brown sugar

A little white sugar

Coconut oil (about 2 Tbsp I think?)

Splash of coconut milk

Vanilla

Pumpkin

Cinnamon

Pumpkin pie spice

Cardamom

Baking powder + baking soda

1 egg

Oats

And topped them with pecans before baking. I just wanted a few and I didn’t want to deal with measuring...and they came out AMAZINGLY.

Lunch yesterday wasn’t until almost 3 pm...so I kinda had my sweets and savory together!

Easy salad with tomato, onion, cucumber mixed with olive oil, vinegar, sriracha, garlic salt, pepper atop spinach and arugula

Delicious coffee with TJ’s vegan chocolate ice cream, fresh cinnamon whipped cream, almonds + pumpkin cookies 😋

This was such a delish and easy stir fry - green beans, cruciferous veggies mix, mushrooms, chicken + avocado and sriracha (obvi)

This was soooo good. Made sweet potato chips in the oven + dip:

Avocado

Greek yogurt

Cilantro

Ginger

Paprika

Lime

Garlic salt

Plus baked chicken and spinach and arugula + evoo and balsamic 👌🏽💯

Very similar to the last one but even better AND a full meal...scrambled fluffy eggs; avocado toast on whole grain sourdough + chili lime seasoning; easy salad with spinach arugula tomato onion goat cheese olive oil + balsamic

Monday dinner was 😍💯🔥

I baked sweet potato chips to go with my homemade guac cuz my roommate left me cilantro 👌🏽

Then I was craving Chinese so I sautéed fresh ginger with soy sauce, agave, sriracha, chili paste, olive oil and a tiny dash of sesame oil, and tossed in chicken and shrimp (already cooked) and poured it over a bed of spinach + arugula. It was AMAZING.

I kinda wanted salad but also eggs - so I sautéed mushrooms, tomato, and spinach with garlic salt and habanero sauce, then added eggs then stirred in avocado. It was AMAZE.
