Not something I made, but I just discovered #welovejam ! This small batch jam from California is amazing with a bit of toast. I’m running more than usual so I can get in my pre-run jammy toast, so I guess it’s win-win 😁
Evening baking- apples in the refrigerator just about to go stale- turned into a custardy almond cake chock full of apples! Vegan and GF with almond flour, coconut oil and applesauce :)
Juice is a refreshing way to start or end the day. Every week, I try to have at least one natural drink in my fridge. This week, it’s pineapple juice. It’s simply pineapple blended in my vitamix with water. Straining is optional- I like my fiber :)
My first food post has to be about the first meal of the day, breakfast! Now, I don’t typically eat breakfast, but sometimes I feel like eating something nourishing as well as satisfying. That’s where overnight oats come in.
These overnight oats are made with almond milk, a couple of scoops of vegan protein powder, cranberries, chia and flax seeds, almonds and cashews, along with a half cup of rolled oats. Let them rest in the fridge overnight. My protein powder is sweetened with monk fruit which is enough sweetness for me, but you can add a sweetener of your choice.

A little introduction about myself. I am a gastroenterology fellow at the University of New Mexico in Albuquerque. I am from New Dehi, India, and have grown up a vegetarian. I was recently inspired to follow a plant based diet, and have been trying to reduce my intake of animal based products. This blog is about the various culinary adventures I go on in my search to create a better diet for myself.
