I'm very much stuck in a confusing in between place where I believe in God but in a very different way from Judaism, but I still feel really called to the culture and practice of it. I have Jewish ancestry as well and I want to connect more to it. Would it be wrong to call myself a Jew if I don't exactly practice traditional Judaism? Sorry if this is confusing, I don't know any Rabbis and all I can find is about more traditional sects.
If you are Jewish then you can do whatever you want to do and you're still a Jew. If you are not Jewish then no you can't practice Judaism.
If you have Jewish ancestry, you’re considered Jewish, but that does not mean you have to practice Judaism, though yeah it could be seen as a “good thing” if you did. The issue is more believing in God in a way that directly violates the Torah and other Jewish texts. (Obvious example being something like Idol Worship.)
Unfortunately I don’t know where exactly to guide in terms of specific texts or doctrine since I don’t know your specific details/background, though Koren Publishers has a very good Hebrew/English translation of the Torah which might be a good place to start, but there’s many facets to Judaism that you can look into, from Secular to Reform, Conservative, Traditional, Modern and the various Orthodox branches and try and find the right fit for you.

And that’s a lot of work, but I think I’m in, as least as far as I can see it. I mean, maybe I’ll learn more and say fuck the whole thing, I mean, but I wanna learn more, and I think I gotta be in it to do that. You know… Does that make sense? Shit, did I just talk myself out of it?
Rabbi: Ask me again.
Cindy: Can I be a Jew?
Rabbi: Yes.
I cried so hard during this scene.
First of all, this is beautiful.
Second of all, as a contextual note, the rabbi said no for a reason. In Jewish conversion, one of the steps is that you must be discouraged at least three times. This comes from the story of Ruth, where Naomi told her not to follow her back to the Jewish tribe three times before giving in.

THIS WAS SO IMPORTANT DO U UNDERSTAND. We aren’t a people who actively convert people. You’ll never see a Jewish person try to convert you. We believe in everyone’s right to believe what they want. But it was so nice to see someone who wasn’t raised in it be able to see value in my faith. I have never seen anything like that on tv before
The only thing I want to add/correct. There very much is a something else or ‘heaven’ after this life, but it’s not quite clear what it is, so we simply refer to it as Olam HaBa (עולם הבה) litterally the Next/coming World.
(And the only way you don’t get in is to be a truly Evil person. Not just a sinner or mean. You’ve got to be activly cruel and disregarding of people continuously to loose your stake in Olam HaBa.)
As to him saying no, it’s very much as has been said by the others - Judaism does not missionize. We are very happy with you living your lives, just y’know try and be just and moral? But if you actually want to join into this crazy ethnic tribe/religion, ok, but we’ve got some rules based on the stories of our Heritage aka the Tanackh or what most would refer to as “the Old Testiment”. It also very much relies on an active engagement and understanding that yeah, there’s gonna be ebbs and flows to your faith, spirituality, and levels of observance.
Also asserting or doing something three times is considered a Hazakah (חזקה) a strengthening. So for the potential convert it’s showing the rabbi(s) their resolve, or if you come from a family that doesn’t have a specific custom/Minhag, if you repeat it annually for three years, then boom, you’ve got yourself a family custom to pass down.
