Think Thin: It’s my brother’s birthday and he asked me to bake him a red velvet cake. Now between the flour, the butter, the sugar and the astonishing amount of cream cheese frosting, I decided I would bake-up a healthy recipe for ourselves. Here it is!
Cake: 1/4 C greek yogourt (if using applesauce cut sugar by a 1/4 C), 1 C sweetener, 2 tbsp honey, 4 egg whites 5 tbsp cocoa powder,4 tbsp red food coloring, 1 C almond milk (with 1 tbsp lemon juice), 2 C all purpose flour, 1 tsp baking soda, 3 tsp white vinegar.
Directions: Beat egg whites to soft peaks. Cream yogourt, sweetener, and honey. With a spoon fold the yogourt mixture with the egg whites. - Set aside - Mix cocoa, red food coloring, 2 tbsp water until you get a thick paste, add to the egg whites batter. Blend slowly while adding half of the almond milk, half the flour and proceed with the other half when batter is well combined. Add baking soda and vinegar and beat at high for a few minutes.
Bake at 350 for 25-35 minutes.
Total calorie cake : 1100 or 110 calories for one piece.
Frosting: 250 gm of cream cheese softened, 1 fat-free vanilla pudding packet, 1 tbsp lemon, 2 tbsp almond milk, 1/2 sweetener, 1 tsp vanilla.
Directions: Beat on high until it looks frosty !
Total calorie frosting : 650 or +65 calories for one slice of cake.
Total for one piece: 175 calories
