True love is agreeing to try your wife’s first batch of (maybe slightly sketchy) natto... I was excited to make this for the first time on my own but didn’t get as strong of the classic stringiness as I would have liked. ⠀⠀ The smell of ammonia and earthy taste were all there but the beans may have been a little too dry to produce the proper stringiness that provide the classic mucilaginous texture. If you’ve natto tried it, I’d recommend it, but it’s definitely more of an acquired taste so don’t be surprised if you’re put off by it. Natto is a complete protein and rich in vitamin K. In a nutshell, it’s a superfood, meaning super good for you. And so much for trying to get an extra dramatic effect using black soybeans...
