Here is a simple recipe for all potato lovers! Baby potatoes with curry leaves add a special flavourful twist in your regular dal-rice combo.
Like all my recipes, this can be prepared within 15 minutes and tastes equally goof with dal-rice and parathas.
Things Required: [Serves : 2 | Preparation Time: 20 minutes | Cooking Time: 15 minutes ]
Baby potatoes : 8-10 small boiled and peeled.
Turmeric Powder/ Haldi : 1/2 teaspoon
Coriander Powder/ Dhaniya Powder: 1 teaspoon
Salt : As per taste
Curry Leaves : 4-5 leaves
Rai/ Mustard Seeds : 1/4 teaspoon
Jeera/ Cumin Seeds : 1/4 teaspoon
Onion: 1 medium sized onion, finely chopped
Ginger-Garlic paste : 1 teaspoon
Oil : 2 tablespoon
Steps:
In a pan, roast the boiled baby potatoes slightly and take them out when they slightly brown. you can optionally ad a pinch of haldi in this process.
Roast Baby Potatoes
In the same pan, add 1 tablespoon of oil and crackle mustard seeds and cumin seeds.
Now, add curry leaves and stir for few seconds.
Now add chopped onions and saute for a while. Don’t let the onions turn brown, they just need to be translucent.
Add ginger -garlic paste and saute again.
Add dry spices; turmeric, coriander and garam masala
Add Dry spices
Now add the roasted potatoes and let it cook for 2-3 minutes.
Serve hot with dal-rice or parathas
