For my own celebration of national double cheeseburger day i took our charger burger to the next lvl. I have 2 pieces of pepperjack, 2 pieces of guda, 8 oz of pork rib ends seared with bbq sauce, 6 pieces of bacon, and 2 half pound patties of 85/15 ground beef with toasted sourdough bread instead of a standard bun. #heartattack #cheflife #beefporn #foodporn #nevergonnagiveyouup

Tonights special was a bust... But a chef never gives up and still pours their heart and soul into their art. Alaskan sockey salmon sashimi over a mound of brussel sprouts that were sautéed in compound butter, paired with parsnip puree with sweet baby peppers and a Kandy lemondrop melon chutney with a hint of mint and ginger i think tied this ridiculous and elaborate display together. #cheflife #foodporn #sashimi #brusselsprouts #parsnip #kandy #lemondropmelon #mint #sushi

Here is an image of our specials tonight. In front is my smoked salmon onigiri served with bacon wrapped asparagus and carrots, our pan seared swai filet is on the left with wild rice and sautéed veggies, the mug is a moscow mule and finally in the back ever so small is my lemon and blueberry tart with an almond crust. The 2 fish specials are still available at 13 dollars and the tart is 7 while the mule is 4.
Tomorrow we willbe having another sashimi special, here is a sneak peak. A bed of sweet red, yellow, and orange peppers to start. Then a kick of cayenne seasoning all over this saku cut Ahi tuna fillet, with a sweet mandarin orange marmalade glaze drizzled across with some scallions and toasted almond slivers added for flare. Along with a bowl of vinegared rice, pickled ginger and wasabi for those needing that little extra kick. #sushichef #foodporn #sushi4life #sashimi #ahituna #mandarin

So the final result of the Salmon sashimi with ginger and hot oil was pretty successful tonight. I made ponzu soy sauce from scratch and let the salmon marinade for less than 2 minutes while I heated up a 2:1 ratio of grape seed and sesame seed oil. The salmon laid on a bed of spiraled carrots and red onions, dabs of ponzu added on top then match sticks of fresh raw ginger before being drizzled with the hot oils. I added cherry tomatoes, cilantro, and a lime wedge to finish off the plate setup and served a bowl of rice to round out the meal. #foodporn #cheflife🔪 #sushi4life #sushichef

Tomorrow i will be preparing sashimi cut salmon fillets with ginger and hot oil drizzled over the salmon after a quick marinade in hand made ponzu soy sauce.

So i decided to go for broke and upgraded my futomaki roll for fathers day buffet. I started off with 2 full sheets of nori to hold this monstrosity together. Inside I started out with roasted red peppers, avacados, candied bacon, blackened swai fillets, shiitake mushrooms, carrots, raw salmon, raw tuna, ebi shrimp, stir fried eggs, drunken snow crab legs and claw (steamed in farmer John's multi-grain ale made here in Iowa by the crew of Confluence Brewing Company) and finally strips of seared beef fillet. #cheflife🔪 #sushi4life #goforbroke #hereticnation
