Wine Alert: The "Pepe" wine is produced with traditional method: the vineyard is organically grown, the grapes are crushed by hand, and the wine is naturally fermented in little tanks. After four seasons, the wine is racked again and then bottled. At the end of aging period (from 1 to 30 years) the bottle is uncorked and decanted into a fresh bottle (in order to avoid the filter). We do not use machine, we do not use chemical product. (Winemaker’s Note)
