I’m in Suvereto in the lovely wild area of Maremma. I’m laying by the poolside in this 500 year old Tuscan villa looking over the countryside towards Elba in the distance. The sun is strong, 15 cypresses surround the pool while I lay like a lizard in the 30° heat with a belly full of pasta pomodoro, focaccia, vernaccia, apricots, melon and watermelon. I couldn’t have foreseen this coming two months ago when I accepted this job…

Day 10: After a patience testing four hour cramped van ride we arrived to this UNESCO listed site. It contains 4km of river crusing inside a bat filled cave, with all those rock formations which we learned on excursions to Jenolan Caves back in the day.
