Although Jestyn is a serpent in cannon, I personally definitely think that Jestyn must be a rabbit, especially the English Lop.
There are some my hc, along with my tendency to interpret KOM as a horror work:
1. A medieval manuscript depicting rabbits slaughtering people. Jestyn is a puppet from a medieval European court, and the inspiration of KOM from FNAF and some other horror games, the very first thing that came to mind when I saw Jestyn was an image of a rabbit slaughtering the king (horror films seems especially like using the rabbit as a symbol). This stems from a medieval humour: whilst rabbits are typically seen as harmless and docile animals in tradition, in medieval manuscripts they are depicted as violent creatures. These rabbits share the same sense of absurdity as the notion that 'a fool can mock the king'. The figure most closely associated with the description 'a fool can mock the king without being held accountable' is the court jester-which coincides perfectly with Jestyn.
2.Jestyn's appearance bears a strong resemblance to that of a rabbit, especially the English Lop. His physical features--pale skin and red eyes are very similar to those of a rabbit, and his headscarf resembles a rabbit's drooping ears. Btw a white rabbit's paw pads turn yellow after spending a long time on the ground, which coincides perfectly with the yellow soles of Jestyn's shoes.
3.Certain physiological characteristics of rabbits are also similar to Jestyn's. In reality, rabbits have a strong sex drive, and so does Jestyn.
4.Jestyn himself likes rabbits, so Jestyn is a rabbit.
5.Rabbits are cute, and TynTyn is cute too, so rabbit = Jestyn, Jestyn = rabbit.
Finally, I respect the canon - serpents are cute too! TynTyn is also a cute little serpent! :)
