Ingredients: 1 cup all-purpose flour. 1 1/2 cups milk. 2 large eggs. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 1 tablespoon olive oil. 2 cups fresh spinach, chopped. 1 cup shredded cheese your choice, such as feta, mozzarella, or cheddar. 1/2 cup diced onions. 2 cloves garlic, minced. Butter or oil for frying.
Instructions: In a blender, combine the flour, milk, eggs, salt, and black pepper. Blend until smooth. Heat olive oil in a skillet over medium-high heat. Add diced onions and minced garlic, and saut until fragrant and translucent, about 2 minutes. Add chopped spinach to the skillet and saut until wilted, about 2-3 minutes. Remove from heat and set aside. In a separate non-stick skillet, melt a small amount of butter or oil over medium heat. Pour in a ladleful of the crepe batter and swirl the pan to spread it thinly and evenly. Cook the crepe for about 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip the crepe using a spatula and cook the other side for another 1-2 minutes. Repeat the process with the remaining batter, adding more butter or oil to the skillet as needed. Once all crepes are cooked, place a spoonful of the spinach mixture and a sprinkle of shredded cheese on each crepe. Fold the crepe in half to enclose the filling, then fold it in half again to form a triangle. Return the filled crepes to the skillet and cook for another 2-3 minutes on each side, or until the cheese is melted and the crepes are heated through. Serve hot and enjoy!
