Ingredients: 1 cup cashews, soaked overnight. 1/4 cup coconut cream. 1/4 cup maple syrup. 1 tsp vanilla extract. 2 cups mixed berries strawberries, blueberries, raspberries. 1/4 cup almond milk. 1 tbsp agar agar powder. 1 pre-made vegan pie crust.
Instructions: In a blender, combine soaked cashews, coconut cream, maple syrup, and vanilla extract. Blend until smooth and creamy. Spread the cashew cream mixture evenly onto the pre-made pie crust. In a saucepan, heat almond milk over medium heat. Add agar agar powder and stir until dissolved. Pour the agar agar mixture over the cashew cream layer in the pie crust. Arrange mixed berries on top of the pie. Refrigerate for at least 2 hours until set. Serve chilled and enjoy!
