Last photo of the night, no more film! plus I just wanted to enjoy the rest of the great show. The crowd was huge and the car park overflowing, so I left during the encores hearing them play out all the way back to my car. I beat most of the crowd out of the parking, took back roads through to Sunbury and was home in good time. I heard the next day that the traffic jam heading towards Melbourne was unbelievable. A fabulous day that lives large in my memory. Thanks for watching.

Bouchées à la reine

Salade et pâtes fraîches en accompagnement.

Servi avec un Chateauneuf-du-Pape blanc.

La recette:

Faire cuire 1 blanc de poulet puis le couper en petits dés. Couper 100g de champignons en lamelles.  Dans une casserole, faire fondre 45g de beurre, ajouter 3cs de farine et faire cuire 3min en remuant. Mouiller avec 50cl de bouillon de volaille et porter à ébullition.  Ajouter le poulet et les champignons. Sel, poivre, muscade. Faire cuire en remuant doucement à découvert. Incorporer 2 quenelles nature/de veau coupées en petits dés. Remuer délicatement. Délayer 2 jaunes d’oeuf dans 10cl de crèlme fraîche et ajouter cette liaison à la préparation. Remuez sur feu doux 3min. Faire chauffer les feuilletés au four. Découper leur chapeau et remplir de garniture. Servir aussitôt.
