Today we made apple muffins. But first we preheated the oven to 400° and sprayed the muffin tin with cooking spray.
Apple Muffins makes 6 large muffins. Ingredients: 2 cups flour, 2 tsp baking powder, 1/2 tsp salt 1/2 cup (heaping) chopped apple, 4 rounded Tbs loose brown sugar, 1/2 tsp cinnamon 3/4 cup cold milk, 2 eggs, 1/4 cup melted butter
Sift together the flour, baking powder, and salt. We use a metal wire strainer for sifting as it is much safer for little hands.
Combine the apple, brown sugar and cinnamon, making sure all pieces are well coated. Set aside.
Add the eggs to the milk and mix well.
Add the apple mixture to the dry ingredients....
and stir until well incorporated.
Pour in the milk/egg mixture and the melted butter.
Stir just until combined. Do not over mix, it will be lumpy.
Spoon into greased muffin tin, filling each cup ½ to ¾ full. Bake for 20 to 25 minutes.
When done, tip muffins out on a clean towel. Enjoy warm or cold!
