One we love is a setting swap to the Heian era, Gojo as an heir to the Sugawara clan or as a leader of a branch family, Sukuna as... Sukuna, with all the fun drama you get from a historical setting!
Another of our favorites is a bunch of custom lore for the American branch of sorcery (not canon compliant but whatever), where the biggest threat is curse users as opposed to curses. Much much smaller than the sorcery society in Japan, but with a couple of big families we created with their own inherited cursed techniques, as well as a general custom sorcery culture. We like using it for "Exchange program" type things!
Probably the most out there one we have we call the "Yomi No Kuni AU", the basic gist is in addition to curses coming about in the canon way, theres also an island off of Japan where curses are born naturally separate from humans. In most AUs under this umbrella we have the disaster curses rule the island, its great fun getting to explore and play around with what a curse only culture would be like!
