This recipe came in my veg box recently. I thought it looked a bit boring, but was looking for a quick dinner idea and went for it. Don't let its simplicity put you off, this was incredibly delicious!
I topped it with home made sweet potato wedges (just cut sweet potatoes into thick chunks, season with nice spices like paprika, chili, salt, pepper, garlic powder and a pinch of cinnamon, if you are adventurous, and bake in the oven in a greased pan until tender and crisp).
Sooo tasty, only the garlic will be very present in your breath, even next morning...
