Like most of you, I tried all kinds of recipes when I first got my air fryer. Some were epic failures and I mean epic with a capital E. The recipe that still holds the number one spot is my attempt to make banana chips in the airfryer. What a mess! The bananas ended up cooking in the mesh basket before they could crisp up because I had cut them too thin. On the other hand, this cod recipe was a total success. Basically, it’s my mom’s oreganata fish recipe with a couple of changes. First, I used panko breadcrumbs instead of regular breadcrumbs and coated the fish with a thin layer of Greek yogurt for the panko herb topping to stick. Hope you get a chance to try it.
