Meal Planning Week of 4/13
Starting to post these again! I can post recipes for anything on here; let me know :)
Breakfast:
Oat, chocolate, banana + almond milk smoothie
Banana, chocolate, coconut granola with almond milk & more bananas
Orange, apple + celery smoothie
Kale, apple + ginger smoothie
Lunch:
Kale Caesar salad
Quinoa bowl with mushrooms, kale & avocado; recipe idea here
Mixed greens, jasmine rice, shredded carrot, cucumber, tomato, sauerkraut & avocado salad
Burrito bowl: romaine, black beans, tomato, jasmine rice, lime juice, cilantro, avocado, red onion
Tomato & zucchini soup (recipe here) + salad
Dinner:
Rice noodles with bok choy, baked tofu + mushrooms a la this recipe.
Roasted potatoes, romaine & arugula, red onion, tomatoes
Vegan mac and cheese (nutritional yeast sauce) with kale and broccoli
Fried rice: jasmine rice, broccoli, snow peas, red pepper, peas + large salad
Tomato & zucchini soup + salad
Snacks:

Banana chocolate coconut granola
This recipe is adapted from here!
3 cups old fashioned oats
1/2 cup walnuts if you want (I would leave out if you're using coconut flakes because fat)
2 teaspoons cinnamon
pinch salt
1/4 cup coconut oil (or a little less)
1/4 cup maple syrup, honey or brown rice syrup
1 teaspoon pure vanilla extract
1 medium frozen banana - can be fresh too if necessary but should have lots of spots for better flavor + digestion
Chocolate chips + coconut flakes
Preheat the oven to 325 degrees. Line 2 cookie sheets.
Microwave banana to defrost and mash up until there are few lumps. Then add syrup/honey and coconut oil to the bowl and microwave again. You want this mixture to be more like a liquid/less thick than room temp syrup/honey. Add vanilla. Let cool. You don’t want this to be warm otherwise it will cook the oats a little bit.
Combine oats, nuts, cinnamon and salt in a large bowl. Add syrup mixture and stir until oats are coated. You don't want them to be soggy so if they look too wet add more oats.
Spread oats on the line cookie sheets in an thin even layer (not too thick otherwise the oats can't dry out and you'll get basically oatmeal).
Bake for 30+ minutes (I think) or until the edges start to brown, turning the cookie sheets around in the oven every 10-15 minutes. When you're almost done baking, toss the coconut on top to brown that.
If you're not sure if the granola is done, take it out and let it cool for a little to see if the granola gets crispy when cooling. You might need to turn up the heat of your oven.
Remove granola from oven and allow to cool without mixing it at all. When it's almost entirely cool add the chocolate chips. You want these to melt a tiny bit so they stick to the oats. Add a couple chips and see if they melt too much, if not add more.
Allow to cool entirely. Sometimes I'll put the cookie sheets in the freezer for a few minutes to make sure the chips are totally cool.
Store in an airtight container!
